Callie is getting so good at saying her name and the “ and, girl’s” part. She is so adorable and you’re teaching her good work ethic too. Andrew, there goes your “take over” when you want to retire one day or your assistant when she gets old enough. All of us watching you and your family are always amazed by y’all and I am sure any future babies in the family will learn to work so very hard and will be just like you boys and the way your parents raised y’all and the girl’s parents (Lauren and Meghan and the other ladies) who raised them. Congratulations on all you do.

The beets Andrew is talking about is a "cylinder" beet. It's a variety popular for it's long, cylindrical shape. Growing up we called them " butter beets " because how they looked like a pound block of butter. They afforded a uniform slicing sweet, tender flesh unless you let them grow too large. We of course did can them but they were a summer table staple served fresh at every meal. I guess in Andrew's area regular red beets are the most popular canning beets because the variety of size offered by the same plant fits everybody's needs. A young 3-3 1/2 inch long cylinder beet is ideal for fresh eating but as the plant matures it's tougher and denser.
