I've always dug Wylie and I love his down to earth take on modernist cuisine

Wylie is one of the most creative and respected chefs in America. The negative comments about him in here just shows how little the viewers of this channel knows about the American food scene. It would've also helped if the interviewer hadn't asked such boring questions.

Anthony Bourdain & Andrew Zimmern have or had shows on the Travel Channel, they both started off cooking now they travel the globe & bring us interesting food & the places they come from. In the past few years they both did shows with Ferran Adria,[ some say the father of the Science of cooking], I have to say the way they presented it , it was very cool & interesting.

There were good stuff here, but there wasn't a narrative and structure to the report, but it's a good direction. I'd love to see more reports like this. And as always the shots were beautiful.

He says, "40 years ago, no one knew what they were doing [in cooking food]." I guess he didn't read any of Julia Childs' books?

Do a survey of thinkers in Modernist Cuisine like Harold McGee, Nathan Myhrvold, Ferran Adrià, and Harvard's Food & Science series and how it's applied {el Bulli, Moto, Alinea, Fat Duck, Noma in addition to wd-40}. All of them have pushed development of new devices and techniques for "cooking" and redefining the nature of cooking and eating beyond sustenance. Perhaps you could have looked at cultural historic views of dining and the dynamic between entertainment and nutritional intake.

I think this could have been a better more interesting video. Please review where it went wrong. Doesn't quite live up to high quality of verge content.

Well, the audience of TheVerge sure is neutral. Both opposites in comments were equally thumbed up. XD

Even though this is about science and food, Wylie Dufresne is opposed to the lab-grown burger?? That experiment was a major breakthrough and way more interesting than the crap spewing out of this guy's mouth.

that man is crazy , to achieve completely same goal he would rather kill something or made suffer some animal instead of painless intelligent way

He is talking about the science of cooking, not housewife techniques of how to fry an egg.

Painless and intelligent yes ,but not natural therefore our bodies don't accept unnatural food well.we wonder why there are so many cancers and diseases and it is because of all the artificial flavors ingredients we intake everyday.

I entirely disagree and disapprove of this guys opinions. Seems kind of backwards, the kind of thinking slowing down the progress of humanity on an interplanetary level. Science and shit bro.

Honoring the animal by killing and consuming it? This guy is such a weirdo.

My thoughts exactly. Terrible. The chef can't even explain himself properly!
