At least once every couple of days I daydream about my future home where I'll definitely build such an oven. I built my oven before I found you, but you are a great source for inspiration. 'Fougasse' - without a doubt - comes from the Italian word 'Focaccia' -- let's never forget that the woodfired oven ('forno a legna') is definitely a thing made important by Italian cuisine. The French are really (just) piggybackers. They are really good at that, yes! But Italy is where it's at with woodfired oven cooking, no doubt about it whatsoever.
