Chicken curry and roti are popular dishes in Nepali cuisine, and in many Nepali villages, they are cooked and eaten in a traditional way that emphasizes fresh ingredients and simple cooking methods. Here's a recipe for chicken curry and roti that you can try in Nepali village style:
Chicken Curry Ingredients:
500g chicken, cut into small pieces
2 medium onions, chopped
3-4 garlic cloves, minced
1 inch ginger, grated
2-3 medium tomatoes, chopped
2 green chilies, slit
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon turmeric powder
1 teaspoon red chili powder
Salt to taste
2 tablespoons vegetable oil
Water
Fresh cilantro leaves, chopped (for garnish)
Roti Ingredients:
2 cups of wheat flour
1 teaspoon salt
1 tablespoon vegetable oil
Water
Directions:
For Chicken Curry:
Heat oil in a pan and add cumin seeds. Fry until they start to splutter.
Add onions, ginger, and garlic, and sauté until onions turn translucent.
Add tomatoes and green chilies, and cook until tomatoes are soft and mushy.
Add the remaining turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for a minute.
Add chicken pieces to the gravy and mix well.
Add 2-3 cups of water and bring it to a boil.
Cover the pan and let it cook for 20-25 minutes on low heat or until the chicken is fully cooked and tender.
Garnish with cilantro leaves and serve hot with roti.
For Roti:
In a mixing bowl, combine the wheat flour, salt, and oil. Mix well.
Gradually add water and knead the dough until it becomes smooth and elastic. The dough should not be too hard or too soft.
Divide the dough into equal-sized balls and roll each ball into a thin disc.
Heat a skillet or tawa on medium heat.
Place the rolled out roti on the skillet and cook on both sides until brown spots appear. Use a spatula to press down lightly on the roti to ensure even cooking.
Remove the roti from the skillet and place it on a plate.
Repeat the process with the remaining dough balls.
In Nepali village style, chicken curry and roti are often served with a simple side salad of sliced cucumbers, onions, and tomatoes dressed with lemon juice and salt. This is a delicious and nutritious meal that is perfect for a family dinner or a special occasion.
