I remember seeing this video a couple years ago and couldn’t find it again. I’m so happy to have come across it again now while searching Senegalese Jollof!!! This is the only video where the rice looks exactly like the Jollof I used to get from a Senegalese restaurant in my old neighborhood . I just KNOW this tastes soooooo good ugh 😍 I’m saving this video right now!

The spice mix is my homemade spice mix. You could use grammasala. It is Indian spice mix but very spicy hot. To reduce the heat you could use less grammasala and more coriander powder. The secret is to let the meat fry until it is golden brown and you add the Nokoss and the spice and let it dorèe then add the water you need. When it boils for five minutes high heat then reduce the heat to low and let it boil for an hour before you add the rice that has been washed and drained for an hour.
