To answer the question, Yes some of the Younglings fight Anakin. They lose obviously but Obi-Wan and Yoda watch a video of Anakin killing Younglings and some of them are fighting back.

The older younglings who had gotten their lightsabers, known as Initiates, were the ones who fought... the younglings didn't stand a chance. Originally the bit where Obi-Wan watches the hologram was longer, possibly even seeing Anakin murder Shaak Ti. ROTS was originally supposed to be 4 hours, so a lot got cut out.

According the Canon Finn was able to use a light Saber solely since as a storm trooper they are trained with a Saber, i.e. a normal sword. Therefore Finn was trained to use a sword and that transfered to him using the light Saber as well as he did. Also fun fact, George Lucas wanted to originally make storm troopers have light sabers and just all around be more common place, however due to limitations of special effects he limited them to the jedi and the sith.
