I never understood smashburgers I always been taught growing up working at restaurants is if you smash the burger you take out all the juice out of the potty

That only happens if you smash the patty after the fat has started to render and the meat is starting to cook. A real smashburger, gets pressed to the grill while it's still cold to maximize surface area creating the crispy exterior that seals in the juices that are left in the meat.

Next time you in LA, be sure to stop by a Fatburger. It was founded & owned by an African American woman named Lovie Yancey. They serve the burger in 6 sizes ranging from small to XXL (3 fat, quarter pound patties) with most condiments on it (have to ask for ketchup) they also serve premium toppings like bacon, egg, avocado, chili & cheese. Cheese is a premium, BUT you have a choice between cheddar or swiss cheese. If the cook is cool about it, you might be able to do both, alternating between patties. Their fat fries are simplisticly bomb & so are their shakes. Last but not least, if you're able to finish their infamous XXXL burger while dining inside, you get a certificate & a picture of you holding it placed on their wall of fame.
