Delicious recipe for apricot cake with streusel or apricot cake from the tray. It is the best apricot cake I have eaten in a long time. The moist apricot cake has a quark cream with vanilla pudding, has crispy streusel and also almonds. A very moist streusel cake with healthy apricots!
Ingredients / Recipe: (1 cup = 250 ml)
For the crumbles:
60 g butter (soft) (1/3 cup)
60 g sugar (1/3 cup)
120 g flour (4/5 cup)
Some baking powder
Apricots
Grated almonds (about 40 g) (1/3 cup)
For the cream:
250 g sour cream 1 cup
250 g curd (1 cup)
1 egg
50 g sugar (1/4 cup)
1 pack vanilla pudding (powder) 37 g
For the dough:
2 eggs
100 g sugar (1/2 cup)
Stir until creamy
50 ml oil (1/4 cup)
140 g flour (1 cup) + 2 teaspoons baking soda
30 g corn starch (3 heaped tablespoons)
50 ml carbonated orange juice (1/5 cup)
Baking pan: 18 x 28 cm (7 x 10.5 inches)
