I know I'm like a year late, but since the chicken walks on water (so it can't go underwater) maybe doors or magma blocks could work? Make underwater portals etc. Maybe in the nether when it teleports use fire rez and go in lava assuming that the chicken either sinks and is slowed down in lava or walks on top of it unable to go down. In the end maybe make water pockets with doors underneath you can hide in. ( I don't know if I said something really dumb since I am saying this halfway through the vid)

Just wondering, and I know this was two years ago, but did you try bedding it until it died? it takes like 4 for the dragon which has more armor than a player, and the chikin has 5 times the dragon's health so it would take like 15-20 beds only to kill it.
