Fresh roasted coffee is not supposed to be consumed until at least after 2 days of resting. Read up on it.. also you need to learn about 1st and 2nd crack... and cool immediately when done roasting usually shortly after 2nd crack... dump in a metal strainer with a fan blowing on the beans.... and remove the 'chaff' which is the skins of the beans.
