Intriguing! Will have to give this a try! First time I tried sausage gravy, it was disgusting. Ten years later, I tried again, and it was amazing. Since then, I've had horrible SG, bland SG, and fantastic SG. As with all dishes, it all depends on who's making it, andcto what recipe.

Best way to make yorkshire batter is to weigh the eggs first then add equal amounts of flour and milk. So if your eggs weighed 180g you would add 180g flour and 180ml milk. If the eggs weighed 210g you would add 210g flour and 210ml milk. Keep the batter room temperature no need to refrigerate. Get the fat smoking hot before pouring and do not open the oven whilst cooking. You can make extras and freeze them (if you can resist eating them all), they just need 30 seconds or so in a hot oven to reheat from frozen.

Another one of my faves from north UK, Shetland islands is Sassermaet pie, basically sausage like you had there, fried with onions, sweet pepper, carrot, mushrooms, tinned pineapple chunks, once all fried pour off excess oil, then add a generous amount of apple sauce and mix in, put in a baking dish with mashed potatoes on top with grated cheese over it, oven till cheese browns a bit, your welcome 😊
@lynnedavison-xp3ek16 күн бұрын
Those Yorkshire's with the sausage gravy turned out nice Yorkshire's those you could hear the crispness of them, we do a mince and dumpling one but with ground beef and onion gravy made with bisto gravy granules and a dumplings made from self raising flour suet salt and water then drop them on hot mince and onion gravy and they rise and get crispy like a scone with mash and garden peas is similar, you can buy a box of farmhouse dumpling mix but not much in the box but they are very tasty things like your biscuits and gravy . We make Yorkshire's in the tin you just used or a bit deeper like a old cake tin. No 2 people's Yorkshire's look or taste the same nice with roast lamb and mint sauce as well. Happy cooking Lynne Gateshead.

Can easily see how this would work 😁 Some Brits will have likley made similar, but not with a white gravy. For a quick toad in the hole we'll buy the frozen giant yorkies and fry the sausages and onions in a pan and then; same as here, make the gravy (with bisto type granules) in the pan and just dump it in the yorkie (with optional mashed spuds). Brits just don't make white gravy, its mostly seen as more hassle and brown gravy granules are readily at hand. I think the closest we'd get to a white gravy is Onion sauce for the roast beef dinner 😆 If we're frying sausages and/or bacon for breakfast, most will likely either make fried bread; or drain off some of the fat and throw in a tin of chopped or plum tomatoes into the pan (usually with the sausages or bacon still in it).

For those in the UK who want to try this I've seen others from that side of yhe pond have trouble finding the right sausage taste. I recommend googling what seasonings we put in our breakfast sausage. It runs from mild to spicy. Then you can just youse plain minced pork cooked with those seasonings. I hope this helps someone out. I love a Full English breakfast (except the black pudding. Sorry), bangers and mash and Scotch eggs. Haven't had a chance to try Yorkshire Pudding but it's always looked delicious.

Great idea! Gonna try it. Try adding some extra water to your yorkie pud recipe, the water is what makes them rise and get crispy. Also, I’m not sure I buy putting them in the fridge, since we want them to get hot ASAP. The other tip would be whisk the batter up one more time before adding to the tin because it’s will strengthen the gluten which allows the air to get trapped as it rises

Yorkshires are notoriously hard to get right the oil/fat has to be almost smoking hot so when cold batter hits the oil it should rise immediately
@maviscruet27716 күн бұрын
Exactly right kalani , you need an open mind ...im a yorkshire lass & you can put anything in or with a yorkshire pudding .. Bit less fat & deeper tin , you have already made big ones ...also if u make a big batch of them u can put them in a bag & freeze them ...& when u make a roast dinner just take them out & put straight in oven for 10 mins , saves alot of time .....i really like your cooking ❤
@VampireJack107 күн бұрын
Looks similar to how we used to have minced beef in (beef) gravy with yorkie puds back in the 80s. The minced beef would also have diced carrots and peas in the mix - and was DELISH. Yorkshire puds can be a pain, but once you find a baking pan that works - oh, you WILL keep that pan for YEARS no matter what condition it seems to get in! You WILL get it down to a fine art with trial and error, and once you've mastered them you will never eat roasted meats without them ever again. Oh, and try them with a nice curry....

My Yorkshire pud mix..... 1 cup of plain flour 3 eggs in the same size cup as you use for the flour top off with milk (for pancakes I use 6 eggs instead of the extra milk) 1 cup of milk Salt and Pepper into the mix (to your taste) (I add sugar instead of S&P for pancake mix) 1tsp of Mixed Italian herb (no herbs in the pancakes) I mix in a bowl with an electric hand mixer, (gets lots of air into the mix), then put it in the fridge for an hour....

I'm so up for white gravey with my yorkies.... I keep saying this..... LITTLE MUFFIN TINS ARE NOT DEEP ENOUGH! You need at least 1 inch deep tins to push the batter up and become crispy, before the batter can bubble up and overflow the container, once the batter has risen fully it will then cook properly throughout the whole yorkie rather than being dense. Alternatively just use a lot less batter, but i'd go for deeper tins myself

You used a different tray for the yorkshires when you made your roast and you got a decent rise out of them, so it must be down to the shallow tray you use (when they don’t rise). As long as you’re happy with how they taste that’s the main thing.
@roldzz16 күн бұрын
They looked similar to his first attempt where imo his batter was too thick and heavy. Prob due tto not measuring the eggs first then adding equal amounts of flour and milk to the eggs. Eggs vary in size. Also flour might be diff, lot of ppl add a little water too and let the batter come back to room temp. Lack of rise usually down to batter being too thick.
@fabbie386216 күн бұрын
@ he’s made them a few times. There was a vid of him making them prior to the roast (not sure if it’s on his YT channel or other social media) and they turned out the same as they did on this video….He used the same tray in both…. The super shallow one, and didn’t get much rise out of either. Maybe it is something to do with the mixture and not the trays but his roast and toad in the hole had decent rise and he used deeper trays for those. With that’s said… if he’s happy with how they taste it’s no big deal.
@roldzz16 күн бұрын
yorkshire pudding mix cos egg sizes vary most recipes use equal parts flour and milk to the volume of eggs. use 2 cups the same crack eggs in one then fill the other with flour up to the same volume then empty into a bowl fill the one used for flour with milk to equal volume of the eggs. hotter he oil and quicker u can transfer the better, prob let ur mix come bk to room temp too from the fridge? deeper pans might help too.
@roldzz16 күн бұрын
p.s these yorkies look similar to ur first batch where the batter seemed on the thicc side? if it seems too thick add water, many recipes include a small amount of water to help create a lighter, crispier pudding too, water hitting hot oil has a reaction too.
@LaughswithT2416 күн бұрын
Of course it sud be good, Uve literally just made ur own version of Toad in the Hole 😂
@roldzz16 күн бұрын
A Yorkshire pudding batter should have the consistency of pouring cream or double cream, meaning it should be runny enough to pour easily but with enough body to coat the back of a spoon; essentially, similar to single cream. Avoid a batter that is too thick as it won't rise properly. Smooth and lump-free: Make sure to whisk the batter well to remove any lumps. Not too watery either but most add a bit of water it helps create a lightter crispier yorky pud.
