In Canada, you can self-identify your ethnicity. Historically, the identity of French-Canadians has changed from "French" to "Canadians" to "French-Canadian" to "Québécois", and how you identify your ethnicity depends partly on your politics (for example, those who are more in favour of Quebec independence are more likely to identify as "Québécois" as opposed to "Canadian" or "French-Canadian". So most people in Quebec who identify as "French", "Québécois", "Canadian" and "French-Canadian" are in fact French-Canadian. French-Canadians are essentially those descended mainly from French colonists who settled here before 1760.
