You have one of the coolest outdoor cooking areas I've ever seen. I love the little wood burning stove in the background to keep you warm. Obviously where ever you're at it's cold! Nice job on the tri-tip!

Tri Tip Roast has ALWAYS been my favorite cut to slow cook. To my experience they seem to plump up as they cook. FANTASTIC recipe for rub! I must try it.

Baby Back Maniac 1. watch the grain the beef has the California bend in it to throw off those Texans. Cook to a medium, often the lack of fat can make this cut very chewy. 3. Sous vide a brisket and keep the AuJus. Two hour smoke, 1 hours Texas crunch with brisket AuJus, I call it a Trisket. Perfect for sandwiches.

Yeah! Tri-Tip is king here in California. That rub was awesome and I'm going to try it but it's pretty much salt, pepper and an oak wood fire for me and my Tri-Tip. I like the idea of keeping on and scoring the fat cap. Good call Chef.

Great video. My only issue is here in Dallas my grocery stores don’t carry tri tip cuts. They only carry sirloin and steaks from the rib section.

Here in New England we don't see too much tri-tip. I've picked up two and both times it's been tough and chewy. Now I noticed in this vid a quick cut right when you were taking your test taste bites and your's looked tough/chewy too. So is it the cut or the way I'm cooking it? Oh, and your sauce looked great and I will be trying that!

That looked great, and I think I need to try that rub sometime. Here in the United States, the multi-colored peppercorn mixture is called peppercorn melange. I enjoy it and it's what I put in the pepper grinder on the dinner table.

Nice Roel, I have done Tri-Tip a few times. I never had one with the Fat Layers that one had, I wish I did. I think Tallow is so versatile in Cooking. I do save it when I have a Rib Roast that I have to trim. Yours looked so good I was thinking about a Road trip, or should I say Boat or Flight Trip.

Is it safe to use whisky like that? I can't help but think of the few times I have done a flambe and wonder what would happen if the alcohol vapors ignited inside the closed up kamado. I really enjoyed the video but since Tri-Tip is not often seen around my parts I have never cooked it. Time to have a talk with the butcher.

Jim Panse I have tried several Tritips/ Bürgermeisterstück/Tafelspitz from german kettle from local butchers. The marbeling of Limousin or Simmentaler is too low from my experience and it does not turn out tender if you smoke it. Made Picanha from US beef and it turned out great.

I get tri-tip cheaper than ground beef, and in turn I grind my tri-tip into ground beef, when I'm not grilling it, makes a great hamburger.
