A mirror finish on a blade doesn’t mean it is necessarily Sharper. The quality apex of the bevel, the angle of the the edge, and the blade geometry/thinness is what makes a knife sharp or not.

Fun fact : the same instrument has two different names depending on its purpose. It's called a bistoury for surgeries and a scalpel when used in labs to dissect. It's also called a lancet when double edged

The problems with most (but definitely not all) machined edges on mass produced knives is there's typically no decent method of quenching so many blades while they're being machined so the heat can cause the edge to soften more than necessary. It's why any professional blacksmith will tell you if you plan on using a belt sander to put a bevel on a blade quench it with water as often as you can to prevent the temper from being weakened by the heat produced by the friction of sandpaper on metal. It's why despite the sometimes massive price gap buying hand made kitchen knives is always the superior way to go and you help support small business in addition to getting beautiful quality knives. I'd rather pay 200 for 2 or 3 knives that will hold an edge than 50 for 20 knives that go dull in a week

You know they use coolant when grinding the edge right? Unless it's a really cheap knife, it's unlikely they messed up the heat treatment during grinding. Higher end knives generally use steel that can be heat treated to a higher hardness while still being tough. Although better steel will keep a sharper edge for longer, a correctly sharpened and deburred knife blade will still keep an edge for a pretty long time, even for relatively cheap knives. With proper care, you can keep a cheap victorinox knife for years before even considering buying a new one.

@@MrPolluxxxx read your own comment then read mine. You're referring to HIGHER END knives. I specifically referred to cheap mass produced knives. The point of mass production is provide as much of a product as possible for as cheap as possible with no regards to quality 🤡

Define sharpest? At cutting paper? At cutting meat? Wood? Rope? Because different edge angles, grits, steels, all make a difference. My kitchen knives are at a much steeper angle than my edc folders. Mirror edge doesn’t translate to “sharper” for certain tasks.

I made a 90 degree with 1018 steel just as sharp as that scaple. How, with a grider used for machining flat surfaces. I am more batshit crazy than German machinist and I stood over that grinder for days and hours to make a retangular block of 1018 perfectly square. That block was mirror polished from that grind wheel and the edges were so damn sharp!

That’s not a scalpel it’s a number 10 xacto blade. More of a hobby knife. Surprising fact hobby knives are sharper than medical grade scalpels.

Lol no, if you have any sort of knife worth what you paid for it YOU DO NOT NEED TO SHARPEN IT BEFORE USE. Unless you’re extremely experienced in sharpening, chances are that factory edge will be better than whatever edge your every day person can put on a knife. Oh btw if you have a pull through sharpener, that’s not sharpening your knife. It’s ripping chunks out of the edge via carbide. Horrible for a knife. Carry on

You….can sharpen …that kitchen knife …..to be sharper…than that scalpel….. start from 1k grit stone all the way to 20k 😂 excessive….but you will never have a sharper knife ever …..if you do it right ….that’s how I do my cut throat and it’s deadly sharp

Only sharpen your knives after buying them if you either know how to with a whetstone, or plan on sharpening them constantly (if you don’t have expensive knives with good steel) I bought an expensive knife sharpener that was much more efficient than my manual pull through one. The cost of the sharpener was lower than a new knife set that matches my kitchen. Unfortunately, my purpose was to restore my old knife set….which it did tremendously. However, because of how sharp they are now, they dull MUCH more quickly… This is fine if you’re a professional chef, or somebody that knows how to get the right angle with a whetstone. But for 95% of consumers, the sharpness that the manufacturer ships their knives with is sharpened to be ‘sharp enough’ to prevent the need to constantly need to sharpen them. Most people do not have expensive steel, so edge retention is not something that they will be buying. Telling somebody to sharpen a knife that likely has poor edge retention is setting them up for an unending cycle of sharpening.

Bud, this has nothing to do with one being better. Obviously they’re both machine sharpened, probably via grinding wheels by robots hence the perfectly parallel grind lines on both. The difference is the kitchen knife’s bevel is sharpened somewhere in the neighborhood of 15°-17°, the exacto or “scalpell has a WAY WAY WAY taller bevel so they can bring the angle of the bevel down even further to say 12°, then the edge is polished to some extent. That’s it. The scalpel gets the benefit of having WAY lower edge geometry on the polished micro bevel which is what you’re seeing, then that cut transitioning to another narrow angled secondary bevel which gives the knife narrowness and it gets to make the cut over a longer surface as opposed to the kitchen knife.

Let's not ignore the important other factor, edge geometry. Thin edges will have a huge advantage over thicker in cutting ability which is the main reason a razor is sharper than say a kitchen knife and a kitchen knife sharper than say a bushcraft knife and so on. Your comparing apples and oranges here regardless of how well "sharpened" it is. Almost always the thinner blade will cut paper better. Try cutting a vegetable with it though.

Those aren't cheap 'machine lines' That's the scratch pattern. Every knife has that unless you polish the edge, which is totally unnecessary for a kitchen knife

I would be more curious to see an actual scalpel and not a hobby knife. Usually scalpels are sharper than hobby knives but made of a worse steel as they dont need to be sharpened and instead the blades are replaced.

Once I got the blunt side of a butter knife razor sharp by using an angle grinder and a sharpening stone...it takes a while, but anything is possible!

That scalpel is no joke lol, my friend went for a checkup and a scalpel dropped off the table(unlucky him) It went through his lap like butter then it went from 90° to 30° and make a big wound that he could see his bones.
