8:11 The reason that Bulgarias one province flipped to Serbia is because that province starts out as a core of both Serbia and Bulgaria. When you full annexed Serbia they still had an army, meaning it immediately became a stack of rebels which began sieging the closest Serbian core.

mamluks is a bit funnier and faster of a start but the actual "best crusader state" is aragon IMO. they get a good permamodifier for taking alexandria and can likely get both iberian unions before they flip tags.

Also you cannot be the HRE emperor. I tried to complete the anjou (realseable from provence) missions (from the missions expanded mod) then form jerusalem. But unfortunately by the time I completed its mission, I had already revoked privilegia.

Forming Latin Empire is a part of crusader state missions that was updated this patch. Any nation with those missions like Athens or Epirus can do it. Previosly that mission just granted you the empire rank.

How did you spawn multiple rebel armies? Also, how do you handle religious unity, since for me it does not let me accept it because I have too high religious unity even if they control large dev multiple provinces/half of my country. This usually leads to have to auto-accept their demands before the would capture enough territory for me to accept conversion.

They spawned by themselves, just because they controlled a lot of land. As for religious unity, it shouldn't influence conversion. You can accept if majority of your dev is of correct religion. To not let them enforce demand, wait until they go away and unoccupy provinces, also don't let them occupy capital for too long.

You need to let them siege, but not let siege more than 50% of provinces at the same time, and unsiege capital after they leave. Otherwise, it won't work.
