I once heard a chef talk about the "secret ingredient" for food in great restaurants. He said "Butter. A lot of it. An absurd amount of it. If you want to eat healthy, don't go to restaurants". It got stuck in my head and I can't forget it.
@connormartin13223 ай бұрын
When Anthony Bourdain was first becoming a household name (after he wrote kitchen confidential) he went on the Oprah show. An audience member asked what the secret ingredient was to some dish. He replied that the answer is almost always “butter” regardless of the dish, and if you have a single appetizer and a normal entree in a good French restaurant, you’re consuming about a half stick or more of butter in one sitting. To see the reaction of Oprah’s audience, you’d think he shot a puppy on stage.

I’m just gonna throw this out there. I haven’t seen nobody ever made this comment and you owe me $.25 apiece if you repeat this. When you order the temperature of your steak at a place like Texas roadhouse that will cut you your steak order a big enough steak that the Dunn will meet expectation. Just earlier this year, I went in and asked for a 2 pound ribeye, medium rare, and it was perfect. If you’re going to order a 12 ounce steak, a 16 ounce steak be prepared to be disappointed with the temperature done this it’s going to be a level higher. Always order the biggest steak available at any Steakhouse. It’s OK to take leftovers home the smaller the steak the shittier the cook it’s not the cooks fault it’s just you’re asking for some dumb shit on a small piece of meat. Again, apologies for all typos I use voice to text. I have a southern accent and my phone doesn’t understand what I say. God bless.
@davidduckett80634 ай бұрын
And for additional information if you order your steak, rare or medium rare at a hibachi joint, they’re gonna give you your steak way before most of the other people at the table and so you’re gonna be sitting there waiting on the rest of your food. Yeah, while the expensive steakhouse I sometimes go to DOES have a nice crust/meat quality on the steak, the main killer ingredient seems to be the big pat of compound butter thrown on top. Seems to do the trick. I'd love to have their recipe, but I'm assuming it's just some usual variant of the red pepper/bell pepper compound butter with some spices, because it does have a bit of a spicy kick. Absolutely makes the steak toptier. I think average home cooks have lost out on what all our ancestors did naturally: cook in animal fat. Do that by default and EVERYTHING tastes better. The whole "fat will kill you" public health/marketin campaign that the government foisted on people for the last 50 years really destroyed a lot of flavor in foods. We're evolved to taste about three things: salt, sugar, and fat. Take away the third... and well... sure, sugar and salt are great, but fat's even better. Or rather, it's a force multiplier for everything else.

I'll tell you what I like about this guy, its nice to see a Made In pan that is filthy and has seen some use rather than the usual pristine "I have just been sponsored by" ones that you usually see.
