Saigon is the capital of the Cochinchina region where the two cultures of India and China intersect and they learn from France how to make more luxurious dishes, of course the food has been adjusted to a great combination. . It's just a pity that Saigon fell into the hands of the damn communists, it didn't want the world to know about Saigon

I always love to watch Gary and Max together because they are part of a very, very highly skilled Southeast Asian hobbyist group that study languages, recipes, ingredients, cooking techniques and culture - to get to their level takes extensive studying, exploration and taste testing. Most KZbin traveler or food vloggers are just amateurs. Even the big names like Mikey Chen, Sonny etc aren't on Gary and Max's level. Even Mark Wiens can't compete with them, no shade, it's just facts.

This guy's eating Pho (the Vietnamese National Dish) and @8:17 he called "CHINESE herbs" as the ingredients of Pho, What the F*ck ?? There's no fcking CHINESE ingredients in Vietnamese Pho. In thousands years, he will never get to the level like Max. MAX is the best! This guy sounds and looks clueless, just look at the way he eats Pho and talks.

You are right Gary. When I was a little girl, the only time I had Pho was the time I was sick. My parents insisted that I had Pho to get healed quickly and it was true, I felt much better after having a bowl of Pho. You remind me of my childhood. Thanks for sharing your clip. I enjoy watching it.

Phở in the south have the thicker broth, a little bit sweet, and you can add kinds of fresh herb that you like Phở in the north have the light broth, the chef already mince 2 (or 3) kinds and put into Phở for you, so you just eat when you see the bowl of Phở. :v chilli sauce, pepper, lime, pickle garlic is up to you :v To me, i like north version more. ^^

Top tip from Max and I agree with him 100%. Never add any sauces into your Pho, only a squeeze of lime or lemon should only go into the broth for flavor and if you prefer add your herbs/veggies into the broth. Dip your meats into sauces made in a separate bowl. Try your broth before adding anything to it first.

@@ThaiRoney Keep searching for a good Pho shop, you would not have to add anything but a squeeze of lime. Broth should have full richness, a bit sweet, it's usually on the salty side unless broth has been dlluted.

I think some people cannot believe, this bowl of delish soup makes one so happy, - until they try it out - It is a sort of lucky "medicine" lol! The Japanese make great ramen and all, but the thing with ramen is it's rich and heavy....Vietnamese broths tend to be lighter and brighter with the use of the endless copious amounts of herbs and such. You can eat pho all the time due to the fact it's not as rich or heavy, whereas ramen, you can only eat so much and then you get tired of it.

I am Vietnamese living in US. Ramen and Japanese foods are just average. People just over hyped anything Japanese really. If you've experienced one of the best food cultures in the world, it's hard to find a better one.

Gary, You are right! Vietnam has the best Pho and it is cheap as well. Nowadays, we have to pay at least $15 a bowl in California. I have never tried with the raw egg but will try it when I am there next weekend. Great video, and thanks for sharing. You just got a new subscriber!

Descendent Vietnamese shops of Beef noodles except Boon are very popular in NorthEast Thailand, fresh herbs, veggies, and grilled chilies with some grilled fermented shrimp in Thai called "Kapi Pao"...hot spicy with savory broth.

In North America, Pho is out of this world also. If you travel to the North East, try Pho Liên in Montreal, Canada. The Midwest, you will have to try “Pho Tank” in Chicagoland. Here they make Pho to the next level…:-)) For the Pacific North West, try Pho Bac… they give you a big bowl of pho with a beef rib on top of it. Of course California has many good pho restaurants. I lived in SoCal more than 20 years but “Pho Tank” in Chicagoland and “Pho Bac” in Seattle are my preferences. There’s something abt pho in the cold climate… no food options can beat a hot bowl of pho.

It was delicious, honestly making my own Pho for years now. It only takes about 2 to 3 hours to make the broth, a really good broth. I think most places brag about 24 hour cook time because they make them in huge pots which may take a lot longer to make and perhaps on low heat etc.

You guys should try Pho Vietnam in District 3 if you haven’t yet. Known for their pho in stone bowls. They make the bánh phở in house. The broth is pho-nomenal. Best phở in Saigon.

Hue is known for it's food...but Hoi An has a ton of amazing eateries due to all the tourists concentrated in one tiny area. Try the salted, peanut, coconut, egg coffees while you're in the area. I'd recommend doing a food tour in Hoi An (watch the video "Steph and Pete" did last year) or go to the restaurant that "Chase and Shelbs" went to in Hue (it's the video titled "Trying Authentic Vietnamese Food").

@@Sunnysdelights Definitely do Hue...Ellis WR went there and ate a lot of authentic Hue/Central Vietnam stuff. He liked a lot of the food, but he doesn't seem as picky as most Westerners whom have problems with texture (e.g. tapioca stuff that can be chewy isn't a Western favorite in savory dishes...or too much tapioca in some soupy dishes makes it look like snot...LOL).

keeping the chili on the side is the right move for Phở 👍mixing it with the black think sauce (similar to hoisin sauce) to make a dipping sauce for your meat will be the next level.

Its like they took the pho side from the north and upgraded it. Both taste great but the south style has vegetables and broth has deeper flavors. I cook pho within less than 2 hrs and obviously the broth is not comparable to people who cooks more than 24 hr lol but still taste great

In the South, there are two largest cultures in the world that are India and China, the food of the South is almost suitable for everyone's taste in the world, along with the fact that they are proficient in combining healthy spices such as green vegetables, herbs, etc*

Phở taste different throughout the day. When the shop is just open, the broth is smooth, and lightly tender (best time, in my opinion), but when it's in peak hour broth aint that good anymore, their broth running low so they have to put extra boiled water and input more salt) or because of the number of beef dipped in its taste too ... beefy

Yeah, do not put the chili oil with lemongrass in pho broth-In bun bo hue, yes. I don’t know why too many pho joints in saigon serve this condiment. Hoisin and chili paste are all you need.

I just recently tried pho and at different restaurants. I found that the restaurants that use little to none of the spices and msg doesn’t taste good . I love the strong taste of the spices I believe are cinnamon, Cardamom, star anise, etc. omg so good ! Also, the fattier the broth, the tastier! Those restaurants that cater to American taste ( no spice, healthier broth) is not good.

Your analogy with A5 Wagyu beef versus tough meats before braising is bang on. Rather have Vietnamese beef over Japanese beef any day of the week and twice on Sunday 😂

Vietnamese soup takes 4to8hrs for the broth slow cook. At home it always takes 6hrs, due to it being a smaller portion. Even when vietnamese restaurant is closed they still have food prepping and soup broth slow cooking.
