Richie adding “Joy” as one of his non negotiables is so important because ever since the beef became the bear, they’ve been so obsessed with elevation and prestige that the heart and soul of the original beef restaurant has been lost.

The last scene is showing the amount of stress and anxiety Carmy is putting his people thru. Tina is usually unshakeable but she was literally stuttering at one point, thank goodness for Sydney being the voice of reason and doing what Carmy won’t do, which is lead! He’s sadly becoming that Chef (Joel McHale) that bullied him and made him feel small. And just a reminder, Sydney is supposed to be his creative partner and yet he is not collaborating with her at all even tho she’s carrying the brunt of the restaurant. Richie has some very good points but both of their hotheads don’t make a right and Richie’s attempts are being overshadowed by his inability to reel in his temper with Carmy.

I just watched that episode and I was confused why he started walking back into the kitchen with it, so I thought maybe it was just for show (?) come to find out he was just so nervous he forgot to place it down😭

Sydney really is the rock in that place. The way she coached Tina was so beautiful. Tina is usually calm but Carmy is stressing everybody out. Sydney has to bring that balance to the kitchen.

That's not at all true though. It could be something a Michelin critic does, but it's not something they all do, nor is it part of some large conspiracy or a code that they have. If a critic does that, it's to test the attentiveness of staff, but in truth Michelin judges staff attentiveness based on much smaller details. Picking up cutlery is the bare minimum at any restaurant with waitstaff.

One of the orders on the ticket Sydney was looking at didn't have a time next to them (it never went out). So someone didn't get their order. That happened because of Richie & Carmy fighting.

Sydney is fully embracing Chef Terry and Daniel: nurturing and teaching while cooking and giving Tina more confidence in themselves. Meanwhile Carmy is embracing Chef David. Ruling with iron fists.

that scene with Tina and Syd shows what real leadership in the kitchen looks like. I think Carm was realizing that Sydney is the only one that’s holding the kitchen together; which isn’t great because he’s supposed to be the leader. I do agree with Rob, tho: he won’t be able to focus on much else until he resolves his own personal issues, one of which is his how he left things with Claire.

This episode was something. I definitely needed a breather. It was the first full month though. That's why they kept showing the tickets that had the dates on it. They started in June and ended in July

Just to point something out based on what Bryce said at the beginning, the courses aren't all done at the same time, it's per table. So they may have 3 tables on course 2, 4 tables on course 4 and then later ones just starting as others are finishing dessert. Very complex operationally

Frankly? This episode I'm 100% on Richie's side. Carmy's gone full maniac, his non-negotiables are insane and he's treating FOH like shit because of his personal issues with Richie. They should just take it outside, throw hands, hug and be done with it

When you see all the mistakes and things being dropped near the end of the episode, it's not all on the same night. The whole episode is basically a montage of The Bear's first month and a half of service (one of the last tickets you see is dated July 13, 2023, and the restaurant opened at the end of May).

Those butter is 1/30 the amount Mikey saved up for Carmy. This is a non-sustainable business model, not to mention overworking their staff. I believe this parallels the real world "best restaurant in the world" in Noma 3.0, which is closing this year for the latter reasons. Perhaps also due to exorbitant costs with low profit margins despite having super long waiting lists as a three-Michilin-star restaurant. In episode 1, we actually saw Carmy stage at Noma in Copenhagen, Denmark.

Oh goodness… this episode traumatized me and scarred me for life. I’m pretty sure it’s the worst one yet compared to Review and Fishes because the intensity did not stop. It just kept going and going 😭
