Marry Me Fajitas with Sun-Dried Tomatoes and Chicken Stock
Ingredients:
For the Fajitas:
1 lb chicken breasts or thighs, sliced into thin strips
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 large onion, sliced
2 tbsp olive oil
2 tsp chili powder
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp ground cumin
1/2 tsp dried oregano
Salt and pepper, to taste
8-10 flour tortillas
For the "Marry Me" Sauce:
2 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken stock
1/2 cup grated Parmesan cheese
1/2 cup sun-dried tomatoes, chopped
1/2 tsp red pepper flakes
1/2 tsp dried thyme
1/2 tsp dried basil
1/2 tsp dried parsley
Optional Toppings:
Sour cream
Guacamole
Salsa
Fresh cilantro, chopped
Lime wedges
Instructions:
Marinate the Chicken:
In a large bowl, combine the sliced chicken, olive oil, chili powder, paprika, garlic powder, onion powder, ground cumin, dried oregano, salt, and pepper. Mix well to coat the chicken evenly. Cover and let it marinate in the refrigerator for at least 30 minutes.
Cook the Fajitas:
In a large skillet over medium-high heat, add a little oil if necessary and cook the marinated chicken strips until fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced bell peppers and onions. Cook until they are tender and slightly charred, about 5-7 minutes. Add the cooked chicken back to the skillet and mix everything together. Keep warm.
Make the "Marry Me" Sauce:
In a separate saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant.
Pour in the heavy cream and chicken stock, stirring to combine. Bring the mixture to a simmer.
Add the grated Parmesan cheese, chopped sun-dried tomatoes, red pepper flakes, dried thyme, dried basil, and dried parsley. Stir continuously until the sauce thickens, about 3-5 minutes.
Assemble the Fajitas:
Warm the flour tortillas in a skillet or microwave.
Place a generous amount of the chicken and vegetable mixture onto each tortilla.
Drizzle the "Marry Me" sauce over the top.
Add your favorite toppings such as sour cream, guacamole, salsa, fresh cilantro, and a squeeze of lime.
Serve and Enjoy:
Fold the tortillas over the filling and serve immediately.

The "string" in the chicken is because you bought chicken tenders. They always have that tendon. It's best to pull them out. Or just buy chicken breast instead.

Breast cheaper than tenders but tenders are slightly more forgiving if overcooked.

LOL. I was also trying to help you remember the word "collaboration." An easy way to get that white vein out is to pull it through the tines of a fork. It helps to use a paper towel to hold it because it's slippery.

That tendon in the chicken is in every package of chicken tenders not because it’s Walmart.

@@CookingWthDave I always remove it. Just put the paring knife on it, make a slit and pull on the tendon. It comes out clean.

To cut a bell pepper, cut into the pepper, like one would when cutting into an onion to remove the onions first 2 layers, the paper layer and the first, tough, outer layer. Then turn the knife to cut around he core. This leaves you with one piece, the pepper meat, and the core is separated. m I know I didn't explain that well, but Jacques Pepin did that on a cooking show ages ago. Then you have one piece of pepper you van then cut into strips or dice. It's quick and most of the seeds stick the core.

Just as a suggestion...When wrapping...fold the bottom up, on one end and then the sides... This way it doesn't drip all over.,.. :)

Dave, the white thing in the tender is a tendon. Get a paper towel and a fork, grab the white piece, put the fork between and pull the tendon threw the fork. Easy and no more tendon

If you pierce and anchor the chicken down with a fork and grab the exposed end of the white tendon and pull it between the tines the entire thing will come out at once. It's not always as easy as it sounds but most of the time it will come out with one good pull.

Those are tendons. The easiest way to remove them is to use a fork. However, more often than not it shreds your tender. I’m sure you can find a video on removing them.

That white bit is a tendon/ligament. It’s always been in the chicken I buy and I never buy from Walmart. Just slide the knife down its length.

O hey, here's how you can up your marry me sauce to full-blown Eureka! sauce. Simmer = amounts of broth and salsa verde until it thickens, then return to your regularly scheduled recipe. Does things words can't describe. You'll want rice.

Dave you did a great job they look really good. That was a tendon that you kept cutting off your chicken. All you have to do is take a fork and a paper towel and put the fork tong around the tendon and with the other hand use the paper towel to grab it and then pull it through the fork and it'll pull right out of the chicken. And the peppers you finally slice the peppers correctly on the third one the yellow pepper, that was the proper way. And don't be such a stickler with the measurements. All that cheese that you grated up you should have just thrown it all in there it wasn't that much more and that cheese is expensive you just throw it in there it's no big deal if anything it would enhance the dish.

The chard parts of the chicken will be very tasty. I think it’s called the Maillard reaction. I don’t think you will be disappointed. I haven’t finished the video yet so don’t know what your reaction is to your Marry Me Fajitas. 😀

Hey! I’m making Fajitas today, family celebration tomorrow on the 4th of July. That white thingy, is a tendon. I bought 3carb Flour Tortillas. They’re not Keto, and I’ve been doing Keto for 8 years. I won’t eat the tortillas.

That was a chicken tendon. You can pull it out. You may have to Google it to learn the easiest way to do it. When you buy chicken strips from Perdue I believe it’s already pulled it. Walmart not so sure!! lol. It’s the long piece on the back side of the breast. I just found your channel. You’re hilarious.
