Tip : When baking with coconut flour, it is generally recommended to let the batter sit for a few minutes to allow the flour to fully absorb moisture and thicken properly; this is because coconut flour is highly absorbent and needs time to hydrate fully before baking.

I just made these. Let the dough sit 5-7 min before forming the 'balls while I tidied up the kitchen. The dough did firm up and by wetting my hands between rolling each ball it was quite manageable. I also wondered if you had inadvertently written baking powder instead of baking soda. Baking soda combined with apple cider vinegar would create gas that would work as a leavening agent. In any case I added both. I agree that these would probably work best if not flattened very much. Mine smelled great while cooking (added some onion and garlic powder) but are still not very high. I'm sure they will taste good so I will still use them to put poached eggs on, make open faced sandwiches, or maybe mini pizzas.

I make pancakes with 4 eggs and 4 oz. cream cheese... Mix and pour some batter on a crepe or fry pan. I use crepe. Simple and delicious. Not real fluffy, but delicious with syrup or honey.

Dave check the ingredients on your salt...it has a couple of things in it that you might want to avoid. Replace with Celtic Sea Salt. Look in your store for a silicon muffin tin. Pop out easy with no spray once cooled. Pop the stem off the avocado in the store, if brown underneath it will have yucky brown spots inside. Take home ones with fresh looking green spot under the stem.

I haven’t tried this, this is the first time watching. But if it was me, I would probably put a the cottage cheese in a large metal strainer and then push it down with a smaller strainer. That’s how I do my spinach anyway.

Just give the eggs a good clunk on the counter top instead of the edge of the bowl. Works much better for eliminating shells chipping into the bowl.
