Went downstairs and started chopping, cucumbers, tomatoes, Yellow Pepper, crap forgot onions, added olive oil, italian seasoning, 6 pepper grind, himalayan salt, Red Wine vinegar and little parmesan. As I'm not a Billionaire, I use Colavita Premium Selection Extra Virgin Olive oil, First Cold Pressed.

Mr.Wonderful, you are the best but you should taste olive oil with bread and not using your fingers!!! It's not chic!!! And the vinaigrette should be 3 parts of olive oil for one part of lemon juice (acid). For the non vegan option try to add a different protein than feta cheese, that would be my suggestion... Maybe tuna...
