I’ve made several recipes because I have an Asian daughter in law …and frankly everyone loves Asian cuisine….i am definitely going to try the spice blend recipe…I often use furikake so this will be a change

I dehydrate my shiitake to add them later to ramen. I add the stalks in the dehydrator and they are usually too hard to rehydrate easily, so I powder them. I'm going to try the umami powder. What a great idea!❤

>popcorn Shiitakes / donggu can cause dermatitis if eaten raw, so I guess you can add it to the cooking oil before the kernels pop but probably not after the kernels are already popped. ... Then again I'm not sure if this applies to dried donggu, and I guess you could also just toast the dried mushrooms in the oven or something before adding them to the mix...

I love your recipes! Thnks especially for not using MSG. I am deathly allergic to it-- as are many other people. It's in practically everything processed and used even in Italy now-- home cooks use chicken or vegetable cubes to add flavour to tomato sauce-- I've become ill at the home of a relative... Your umami powder looks wonderfu. ( I shall try this-- and will double the mushrooms) BRAVO!!!!

Incredible, because I usually substitute shiitake and kombu in Korean recipes where fish is required. Just as good, I'm happy to see you using that in this umami spice 😁

That looks so delicious. Too bad I’m allergic to soy. I’m going to need to learn how to make chickpea miso and chickpea sauce. That umami powder will definitely come in handy.
