If you are in early game, never use iron to make shovels or axes or even swords. Stone ones work fine for everything and can use iron for more important things or ones that have to have iron :)

You can find a ton of iron on the surface and coal. However you have to find a mountain of bare rock. I don't know if it is something new they have done, but Endermen purposely walk into your line of sight when you are attacking other mobs, especially ranged attacks with the bow. The best thing to do when you see one is dig two blocks high and two blocks deep into a rock or dirt face. Then you can take them out in safety.
