Ingredients:
4 large bell peppers, halved and seeded
150 g (5¼ oz) green or brown lentils, cooked
1 onion, finely diced
2 garlic cloves, chopped
100 g walnuts, roughly chopped (¾ cup + 1 tbsp)
1 carrot, finely diced
1 stick of celery, finely diced
2 tbsp olive oil
1 tsp ground cumin
1 tsp paprika, ground
1/2 tsp ground cinnamon
1/4 teaspoon cayenne pepper (optional)
salt to taste
500 g (1 lb 1¾ oz) ripe fresh tomatoes, skinned and diced
Fresh cilantro or parsley, for garnish
Bake: 190 °C (374 °F ) Conventional 40 - 45 minutes
170°C (338°F) forced air for about 40 - 45 minutes
