Joshua used to work in a fine dining restaurant. He has videos where he completely over-develops fast food items, but he also makes videos about making regular meals for very cheap. When I first started watching his channel though, it was upsetting how many times I had to watch him make bread from scratch.

Joshua is a local chef here in the Houston area, he worked at probably one of the best sushi/Japanese restaurants Uchi/Uchiko (Austin) in the country. By far a legend in his own right.

Joshua is good cook. He is able to cook Asian delicacy as well. I can see he is trying hard to make some authentic Asian foods. Even tho still far from perfect, at least he knows the basic and he didn't ruin them like Jamie oliver.

Uncle Roger is either a Malaysian or a Singaporean . That English accent and character that he made are the signature of early generation Chinese in Malaysia and Singapore . Its just my guess . Chef Wan is from Malaysia .

Smokey fried rice with duck fat touch salt, pepper and MSG....sauce makes it too dark ....but it's still fried rice ..definitely not Asian !

I like seeing him break character a little. Uncle Roger can get annoying sometimes, and the real Nigel Ng seems like a fun, charming guy.
