I tried this last night. Used duck fat instead of olive oil. Ended up mostly ignoring my t-bone and salmon in favor of eating an entire plate of zucchini and yellow squash. I've made zucchini and squash on the grill before, but this simple technique puts it over the top. Absolutely delicious.
