Quick question , The 3 rd string tuned to F# but does the notation correspond accordingly ie open 3rd written as a G but plays F# ? Am I making sense here

The notation is at pitch. That is, the note you see on the page is the note you hear. On the guitar all that means is that you play everything up one fret, ex. the third string A is on the 3rd fret not the 2nd.
