Ingredients:
Beef shanks
Green onions
Ginger
Bottled Dawo marinated sauce
Crystal sugar
Spices: Chinese licorice, Sichuan peppercorns, star anise, cloves, cinnamon, white peppercorn,
Bay leaves
Sesame oil
Step 1
Put green onions and ginger into boiling water, add beef shank to blanch.
Step 2
Rinse beef shank in cold water, wash and clean, remove fats and fascia.
Step 3
Use Dawo marinated sauce; ratio is 2 bottles marinated sauce to 2 bottles water, add crystal sugar and bring to boil and set aside.
Prepare a spice pouch: Sichuan peppercorns, star anise, cloves, cinnamon, white peppercorn. Crush and put them in a spice pouch.

Place Chinese licorice, bay leaves and spice pouch into the readymade marinated sauce, add beef shanks, shanks should press down onto the spice pouch.
Step 5
Cover the pot and turn on heat until it boils, turn heat off and let beef soak for an hour. Repeat this 3 times.
Step 6
When beef shanks are cooled off, cut into thick slices, dribble with a bit of sesame oil and serve.
