Nice! Liked and Subscribed, and looking forward to reviewing your videos to learn some Vietnamese dishes, especially street food type dishes that lend themselves to cooking in a wok. I have an outdoor high pressure propane wok burner and mainly cook in the backyard to not smoke out the house. Wondering if your thit kho tieu recipe marinade could be adapted to high heat stir frying by adding tapioca starch, dissolving the sugar in a little hot water to distribute the tapioca-thicken marinade, and perhaps do a caramelized sugar sauce separately (using a bit of oil) to add to the wok near the end of cooking. I’m looking to achieve the thit kho tieu taste with the addition of wok hei smokiness, but wouldn’t want to run the risk of burning the mince garlic and making things bitter. I think you on to something!! I think it would work as long as you use a nice fatty cut. Use either Tapioca starch or corn starch to create the texture of the sauce to your liking. Let me know how it comes out. I may try it myself. LOL 😂😘😘
