I really love the people there. And the food are just incredible. Willing to fly there just to eat like that everyday. Great way to spend a week or two for vacation.

In the US, this wouldn’t be allowed due to food safety regulations but there’s so many options for so cheap, looks great. Here we have hot dog carts, bagels, halal carts, egg sandwiches, cheesesteaks. Everything has to be heated or refrigerated if cooked, which drastically increases operation costs but almost guarantees no customer gets an upset stomach. It makes the food more expensive. At the same time, lots of us have weak stomachs or gut issues. I’m sure this food doesn’t taste better than high end or fancy restaurants or food cooked by highly trained chefs but for the price and convenience and considering how healthy most of it looks, it’s amazing what you can get. That’s what I love about other countries with much older histories/civilizations. I don’t know why Americans keep eating raw salads (lettuce) and getting E. Coli when one can simply wash the food and cook it. If I think about it, Chinese people, including my parents and grandparents, rarely eat anything that grows from the ground raw, except perhaps garlic, but garlic is covered by the clove anyways so the inside is protected. Sugar cane. Fruits like tomato and watermelon and all fruits. While Americans will eat raw lettuce, carrots, celery, kale, bell peppers, and such. But Chinese people do eat raw seafood from the water like red clams, abalone, similar to Japan, America, and other countries that do that.

I watched Blondie in China’s channel and they cooked food less spicy because she wasn’t local. When you order food in Chengdu, do they cook it at the spice level a local would eat the dish? If you think it’s not spicy, that may be why. For food like this that’s prepared in advance, the spice level will be the same for every customer. For food that is cooked when ordered, they could lower the spice for non-locals who they think may not handle the spice well and will complain, feel pain, leave the store, not pay for food, or the like. Hence, the spice experience you get at a sit-down restaurant versus this type of cafeteria style restaurant may be completely different. It also makes a difference whether the restaurant serves locals or tourists from abroad and other provinces. They’ll adjust the spice so the customers enjoy the meal rather than feel pain and leave bad reviews because they couldn’t handle the spice. For restaurants like this where it’s locals and the food is the same for every customer, you’ll experience the true taste and spice that locals eat on the regular. You won’t get that from places that live or die by the review (taste) of the tourist or foreigner. The true difference between authentic (although I don’t like to use this word) and not is if the restaurant cooks to feed locals or tourists.
