FoodTravelEntertainment NC I had to look this up too! To quote user Kob_Naiyana1976 on eBay who sells this item apparently, “Limewater is used in Thai cooking to keep fruit used in long cooking like banana in syrup or breadfruit in syrup. The fruit is peeled and cut and let soak in the lime water. The limewater can also be used to make batter crispy when fried.”

I made the recipe but arranged a little. I first put coconut sugar and coconut milk in a pot and heated to make the sugar dissolve. Putting in the melted sugar in the coconut milk made the sugar solidified and it just did not melt in. The cookies turned out soft. So, I put them in an oven for a while on a lowest heat setting and put them in a ziplock bag with a silica gel pack. That made the cookies crisp. I never used red lime paste before, so the ratio I used was may be wrong (I got it from other KZbin video. 10mg of paste per 1 litter of water). Please tell me the correct ratio to make red lime water out of red lime paste. Or, how about.. make the cookies without red lime water and put them in a dehydrator to make them crispy?
