FRUIT AND BERRY SAMOSAS RECIPE
i n g r e d i e n t s:
DOUGH (for 10 samos)
215 gr water
5 g salt
3 g turmeric
60 gr oil, what we fry
630 gr wheat flour in / with
FILLING (For 1 samos):
50 g banana
50 g peach/nectarine
25 gr grapes
25 g strawberries
In water, dissolve salt, turmeric, add oil and pour into flour. Or vice versa, add flour to the water with salt, turmeric and oil. Mix everything well so that there is no flour left. At first it will turn out like a crumb. Combine it into a ball and start kneading a rather thick dough. Be sure to leave to rest for at least 30 minutes - 1 hour, you can stay overnight. So that the gluten connects.
Filling. Wash the fruits, cut into medium pieces. Strawberries should be used fresh in summer. Frozen in winter, do not defrost it so that it does not become too wet. It is very important that the filling is not too wet.
Divide the dough into rolls of 170 gr. For home use, it is possible by eye. Roll out into an oval, about 3-4 mm thick. Fold the oval in half and cut the seam. Moisten one side of the semicircle with water and make an envelope. Put the filling, pulling all sides of the dough. Put half a tablespoon of sugar inside and pinch the edges. Try not to let the filling and sugar touch these edges, otherwise the filling will leak. Make a pigtail and deep-fry for about 4 minutes until golden brown. Roll in powder.
