Essential oil is only used for fragrance. Eucalyptus oil has a very nice smell so it is used. Some people don't like the smell of mehendi. It is totally okay to skip it. It doesn't do anything else.

Also I have heard that olive oil and mustard oil can help darken your mehendi. After the mehendi is dried completely, rub some olive or mustard oil on it and it will look dark.

A good quality henna paste without an essential oil will stain nicely. It just won’t stain as dark. Tea tree, cajeput, lavender, eucalyptus are good essential oils to use. But some people are sensitive to them which is why a henna artist uses EO free henna paste.
