He was talking really fast, however here's a neat tip to help you understand how to make this three-cheese pizza blend recipe: First slow down the video so that you have the time to understand more clearly. This will then enable to to be able ton write the instructions down onto a sheet of paper. If you use a pen make sure that the pen has ink in it and isn't dried out, and if you use a pencil make sure that that the tip isn't broken or too dull. Blank white paper works fine, but don't use newspaper or magazine paper. Cardboard can work if you have to, but pencil will not work well on any glossy sides so look out for that. Once you have the instructions written down, you should be able to take the time to do the instructions he gave at your own rate without having to constantly look back to this video for reference. All you have to do is keep the paper handy on you. It's easy to put the paper in your pocket (if you have a pocket), but if there's a nearby table -and there probably will be- that works as well. Don't forget to properly put away the paper when you're finished; you can put it in a recipes bag, or glue it to a recipe book, or if you don't want to keep it you can put it in the recycling bin.

I'm really glad this video was made. Now I know that once I have 3 separate bowls of an unspecified amount of cheese (because that wouldn't be the only thing I would be unsure of) but the demonstration of how to mix the 3 in one bowl just helped me out tremendously. Do NOT overmix. Mike's 8-second rule is hard to beat and the same one I learned in culinary school. Obviously, double that mixing time if using one hand, and bring it to 18-19 seconds if using only your non-dominant hand. Superb blend. Thanks!

⁠​⁠Surprisingly, students struggled most with excessive thumb interference. Notice how Mike barely uses the thumb. It’s there to act as support and a deterrent to wayward cheese strands. Difficult technique to master, but worth the effort.

A very well thought out video; for years I couldn't get the desired taste of cheese for my pizzas. I tried this, but instead of using "freshly grated Parmesan" like the video suggested, I used some I grated a few days prior. It all went smoothly until I went to take it out of the oven, when all of a sudden my house caught on fire, my dog died and my entire country came down with a tropical virus. I think I tried something too complex for a beginner. Good video any how, but I think I'll stick with simple leaf salads and the like until I'm ready for something so complicated.

I now know where I was going wrong. For my three cheese blend, I was using mozzarella, parmesan, provolone, swiss and cheddar. I could not figure out why my three cheese blend had so much more cheese in it than other cook's version of this. But thanks to Chef Neylan I see the error of my ways. When making a three cheese blend, one should only use THREE kinds of cheese! With this revelation I will try again and this time I will only use mozzarella, parmesan, provolone, and swiss! I hope that will blend properly into the 3 cheese blend that so Michelin starred pizza chefs use in their cooking!
