The 6th of January for gift opening makes sense if you're aware of Christmas songs of really old traditions. The twelve days of Christmas, the song about giving gifts for 12 days, ends on the 6th of January (the Twelfth night). In English tradition it's the day you're supposed to take down your decorations, as it's considered bad luck to take them down any later (if you forget, you're supposed to keep them up all year). If you're aware of that, the best guess is that the Spanish give the gifts on the 6th, since it's a very Catholic country and likely to follow to the older traditions more closely.

The really weird thing is cousin once/twice/ removed (although you'll probably never meet them). First cousin once removed is your parent's cousins or your cousin's kids. First cousin twice removed is your grandparent's cousins or your cousin's grandkids.
