OMG!!! I'm currently reading the book like a novel (had a dream about salting everything) but I could not figure out what the wrist wag looked like in real life. This video is exactly what I needed.

Kosher salt isn't less salty by weight, and there's a huge difference in volume per weight between the 2 main manufacturers (Diamond Crystal and Morton (which contains sodium ferrocyanide)). - Salt is sold by weight. Recommending koshering salt in a pot of water is just racist as it's no longer koshering once dissolved. I've never seen a cook spread as much salt on a board as the food. I fail to see why anyone thinks she's awesome.

Using hands to salt food gives you a tangible connection to how much you're using, too. If you grind salt or shake it you're not going to develop intuition for how much to add because you're not in physical control, the brain likes bio feedback to memorise. Plus every grinder or shaker is slightly different. Professionals have a sixth sense for how much of a pinch or grab of salt to use for every little thing, little differences like this are what sets their food apart even if it seems silly

Kosher salt is >99% NaCl, just like table salt or sea salt. It may be coarser, but that doesn't mean it's 1/3 as salty.

There's a large difference between 2 of the largest manufacturers: Diamond Crystal, and Morton (which has sodium ferrocyanide) when measuring by volume, but not by weight. Also; I don't know a salt that isn't Kosher.

Density is NOT equal to weight. Therefore, kosher salt (less dense) is less salty than table salt (very dense)

She did make a disclaimer in her book that if you are advised by your doctor to watch your salt content, you do not have to follow her techniques
