That Cauliflower rice is a freakin revelation. It digests FAR better than regular rice and it goes very well with curry. A fraction of the calories too.

Right?! Cauliflower is a great thing. I love it just steamed and lightly salted, with some very basic white sauce and some grain patties, or well seasoned small chunks roasted in the oven served with potatoes, ideally also oven roasted chunks.

Michael Thomas the key part here is improperly cooked. Cauliflower is nasty like anything if it cooked improperly. Though it is great if prepared well :)

Totally LOVE this! I made a cauliflower cous-cous salad this week-end and it was delicious. Fried the shredded cauliflower in olive oil as per the rice recipe, added turmeric, morroccan spice, and herbs for flavour. Then added a few of my favourite cous-cous salad ingredients red onion, fried bacon bits, feta, peppadews, olives and finished it with a honey,olive oil, lemon dressing.

Or you can do it the arabic/middle eastern way, the best of all. Here's the recipe: Just cut them to look like broccoli (with your hands, I mean size-wise) and fry them till they are nice and crunchy, don't overcook and don't undercook, they should be brownish. Get a fresh piece of pita bread:and put them on the bread, maybe 4-6 pieces per pita, put cumin, salt, and lemon. Wrap. Simple af and really tasty. Try it :)

Other than the lemon, sounds a little dry to me. Maybe add a sauce or other moist vegetables?

Thomas Favre it's not dry trust me, the juices from the oil when you fry it, and the lemon come together very nicely. The pita bread itself should be fresh, though, because a hard pita ruins any sandwich and pita bread goes bad fast. You can add whatever you want, this is just the base but usually things like this are better simple (think poutine). Still my favorite way to eat cauliflower, it's just so good to me.

I made the rice. One Cauliflower for 4 members of the family. Everyone enjoyed it. I I added juice of one lemon at the end of cooking (-= best friend of cauliflower). I had no pommegranate , but it did not matter. Needs more pinches of salt though.

I made the cauliflower rice and it was absolutely delicious. I used habanero peppers instead of what was suggested and I did not grill the corn, opting to use loose, organic corn instead. I'm thinking that instead of the pomegranates, which add nice texture but not enough of a contrast of sweet flavor, next time I'll use dried cranberries. Nice dish. Will definitely be making this one regularly.

Another great way of using cauliflower is to dip it in a batter made of chickpea flour and deep fry. It's an indian snack called "gobi pakora" and it's delicious with yoghurt and mint sauce, green chili sauce, indian ketchup or mango salsa.

Cauliflower is one of my favorite veggies. I do the rice trick often, as well as a quinoa substitute in tabbouleh and oat replacement for grain free oatmeal. Never thought about the steak approach and your pancake recipe looks great. Thanks!

Nice. Have you ever seen/used dried berberis? If not you'll love them as another alternative to the pomegranite. You can buy bags of it from Iranian grocers (Reza in Kensington High Street will have them). You soak them first to get rid of all the sand and dirt and then fish them out of the water after a few washes. Then you can either add it to the food while cooking or add them afterwards. Tart and delicious. Try them. :)

***** had it tonighr with a veggie curry, i used the basic recipie but tweaked the seasoning, half a teaspoon of garam massalla, fenell seeds and the seeds of 1 cardamon pod, i ten wizzed it with some fresh corriander. result it was awesome thanks very much!!!

Wait, there's people don't like cauliflower? Cut it into small pieces with some branch holding and stir fry for 5-6 minutes then add a pinch of salt. It tastes awesome!

I love a variation of the "rice" that is a kind of cauliflower couscous. A very quick "cooking" on boiled water, blitzer and...the rest is equal. But, goddamn, very good video!!

I just bought a cauliflower today and my turkish neighbour gave me a pomegranate, so I actually just cooked the "steak" and the "rice". You call it a steak, I call it simple pan fried cauliflower. Still boring (but I admit, I did not make your sauce) The rice.. well, decent. But it would definetly taste better with real rice in my oppinion. The pan cakes I have no idea.. Donno if I actually wanna try them.

Personally I would leave out the pomegranate though- never been able to eat those whole- the seed inside hurts my teeth to chew and too woody/rough. I'll just have a glass of fresh pressed pom juice instead ;)
