New Year Chat with Adam ~ Pantry Challenge Start ~

I loved the statement that Adam made at the end, where he said that “you don’t want a tour of our house because there’s stuff everywhere.” I have been reading the Little House on the Prairie series, and that is something that the author mentions over and over again. In the harvest, every crook and corner was filled, and slowly they worked through their stores until the following harvest. This is exactly why your house, and mine, are filled. And it is biblical, which makes it especially lovely.

I love your sons sense of taste in his clothing. My son who is now 33 married with two kids was always that way. He even wore cool shoes with prints. He had a unique style that showed his creative brain. Someone once commented to me why would I let him dress like that and have longer hair. I said if that’s the worse thing he does in his life, he’ll be alright. Grrrr Praise them for their individuality. My son is brilliantly smart and this was a way he could express himself. Sorry to be so long but I’ve heard you say people have criticized and I wanted to send a word of praise to both you, him, and to your family. You are doing a fantastic job Mama!! This is why my husband is a mobile butcher. He lost his job after covid so it was the ticket to go after what he loved. He doesn’t have his trailer set up yet but can do it off a tractor easily. He also has a hoist now which is helpful. So he can come to homesteaders as farmers in our area (we are in north Texas). He also helps a lot with emergency situation when there are injuries and animals need to be culled. It’s been so lifegiving to families and to us. My husband doesn’t age the meat.We put everything in ice chests with ice. Something that you give up with this unless the families already have a locker. We do have a shop we can use for some things. But I love the meat it so fresh. We and another family worked together on a Buffalo and it was such a cool learning experience. Definitely can be done but it is more ideal to have a big hanging locker for sure mainly just to break up the job itself. What I love is that it doesn’t collect the smells of the other meat when taken to a shop.

My husband and I are retired empty nesters. I’m following along with the pantry challenge. I have been stocking up, canning,freezing and dehydrating for quite awhile. I’ve always believed in being prepared even before the current events in the world. My motto has always been “Use it up,wear it out,make it do or do without”! Being on a fixed income we are very frugal and this is an exciting challenge! We really admire your families hard work and dedication to each other. We look forward to your videos. For years I tried to have a nice living room and found out that we just aren't living room people. Last year I threw out the couches and the TV kept the recliner and started to add book shelves because we are all huge readers. The kids adore using the couch inserts to sit and I don't have to worry about the toddlers climbing and getting hurt. If we want to watch TV then we go to the kids room and watch movies. It works and it is the best choice I made last year. This year I'm focusing on gardening and relinquishing control over how the laundry is folded and put away. We are buying new dressers and the older three can put away their clothes how they like so I don't have to spend hours neatly folding just to see it messed up. 😅 🙃

Dude, with 7 kids you should be thankful you have any room for food even if it *is* in the master bedroom! I agree 100% with finding the balance with kids of teaching the value of hard work and still allowing them to be kids. I see other homeschool families that if you didn't know better you'd think the only reason they don't send their kids to public school is so they are free labor at home. If your homestead is so big that you need all the children to work all day, every day, then you have bitten off more than you can chew, IMO. I made sure to allow my son to be a kid as long as possible, because the burdens of life as a responsible adult are heavy at times and there is no reason to rush them into that. I didn't make him work part time through high school either. Let the kids focus on what is important for their age, and if you are doing it right, they'll be ready for adulthood at 18 and won't feel like they were used as child labor instead of being loved as your child. Y'all are clearly good parents. Wish more would recognize that balance.

Already watching this I forgot about the ham steaks I have in the freezer. I’ve got to add them to my inventory. My guys like them with eggs instead of bacon once in awhile, ham and egg omelettes and I can use it to make a ham and bean soup. Love how your husband can make you laugh.

I started our pantry challenge today 1/3/21. I am writing down recipes in a notebook and what items to pull from the pantry as I use them in the recipe. That way I will have something to fall back on in a pinch! Today, it is white chili with canned tureky, some cowboy candy, and white beans from our freezer that needs to be used up! Plus, I am canning blackeyed peas with ham today. Thank you for all the tips you are giving, including what to prep the day before (in your end of year video). It's always nice to see the man of the house cooking a meal! It's just my hubby and I now, so it is also nice seeing a house full of children! Ya'll make me smile!

Finding a balance. Each year that becomes a challenge. Children grow, you get older and well, when you least expected, you begin to feel an ache here and there and once again, you have to readjust your balance. It is a life long adjustment. I'm so happy you guys are conscience of it and that children need to be children. Too much work can result in resentment and you don't want that for your children. Right now, they are happy and it shows your good parenting. Your Levi, aw, he is just so adorable. And my husband thinks your baby is so beautiful (he loves babies). Oh, and that first meal where the food was poured in the center of the table... wow, that was fun to watch. The kids...where are the plates? LOL. You are fine with 2 calves, 3 would be pushing it. Depending on quality of pasture, rule of thumb is 1 to 1-1/2 acres per cow. We have raised cows for years and still out-source butchering.

We bought a quarter side of beef this year for the first time. With all costs included, it came to just over 4.00 per pound. In the past, we’ve ordered a half pig and it came out to about the same price. You have a lovely family. That three years, where your son gets to be eighteen, will fly! Wishing you a wonderful 2022!

Thing about plastic containers is that, as long as they are in use, they are kept out of the waste stream. When we put them in recycling, it is popularly reported that much of it doesn't get recycled. So I make sure I don't/can't have a use for plastics before I put it in the blue bag. "A better year than it was last year" Reminded me of the saying "The only person you should be in competition with is the person you were yesterday!"

Totally agree self sufficient is not possible: growing grains, grinding grains, sugar(?), coffee or tea? There’s not a perfect climate for everything I want (not that I need these things) but the time required to do all that!! I like to say as independent of stores as I can manage.

We process our own hogs every year. Although we started leaning towards just butchering our beef instead and sending the pigs in. Pigs take so much time. We have a smoker so by the time you smoke all the meat and cure and stuff the sausage it’s very time consuming . Beef it would just be cutting up.

We just ended up butchering up a steer because he thought he was Superman. If you’re grinding up beef into hamburger, it goes very fast. But if you want any steaks/roasts/premium cuts of meat-prime rib, brisket…you want to let it hang for a week. It took 2 days to break down. I think processing the “premium cuts” of hogs are time consuming but its easier I personally think. We butchered a 600 lbs hog the beginning of November.

We have considered raising a beef or a couple pigs but don’t have a trailer either, however, There is a family in the Bluffton area that is considering starting an at home butcher service (come to your home). They would have a refrigerated trailer to hang the meat. If they do start it up, I’ll let you know.

Have you considered raising a few rabbits? A great alternative meat source that has a short time line for production and provides excellent pellets to add directly to your garden. Looking forward to following your family this next year.

Someone said it took a village to raise a child it actually takes a community to take care of families. You need to have a network that you can depend on and you may even be able to add to it. Early on in my childhood Mom and Dad figured out that their potato crop just did not do good even with soil amendments and soil amendments the clay was not good for growing potatoes so that's one thing they quit growing in their garden and went to the potato farm about 10 mi away usually once a year and bought bulk potatoes and stored them in the basement for the winter you had to sort and sometimes you know pull the sprouts off and use them as necessary, another thing we had a short row of strawberries on the side of the garden just for eating occasionally basically but we went once or twice a year as a family and pick strawberries and Frozen canned strawberries, mom always said it was much easier for her we could grow the strawberries but having them picked all at one time and taking care of them all at one time was a lot of hard work but it was kind of a one shot thing. The other thing I remember was corn and green bean harvest Time both grandma's and sometimes my aunt would all appear the kids and Dad will go out and pick then we each had jobs I washed jars Grandma packed mom and two Grandma snapped and washed same with the corn peaches also that I remembered they ordered and all got together and did peaches.

Thanks to your videos and the time you take to share with us, I finished my cupboard and freezer inventory and meal plans by the first of January. My challenges include not buying store breads, cakes, biscuits etc throughout January and to definitely make a dent in home preserved and canned goods. Renting a trailer is fairly cheap if you only need it occasionally. MIgardener has a book in "autopilot" gardening, it's very good. I agree that form follows function.

Jessica, yall have a lot of opportunity available that we don't have. I don't have those neighbors down the road that have cow feed and boxes of tomatoes and apples and corn et al. Farmers around here won't sell to homely folks. The farmer's markets around here are super high priced, I'm talking $5 per head of broccoli, $10 for 5 apples, $7 for a pint of strawberries, seriously! and it just isn't worth it. So we don't have the option really to cut more gardening or whatever out. In fact, I need to expand my garden far more than what I have space for. So that leaves me still buying most of everything from the grocery.
