Howdy from Yuma, Arizona. I do LOVE cornbread and Mexican Cornbread is at the top of my list . I like to add 1 large jalapeño pepper that has been seeded, membranes removed and minced.

This Mexican cornbread is really going to be good with butter bean soup. I have a little 8 inch cast iron skillet that I make corn bread in. It’s just the right size for me.You guys are making some real good pots. Love our videos,God bless and stay safe.

Can’t wait to try this recipe and your butter bean soup too! I know what you mean about a sticking pan. Grease it well before pouring in the batter. Also I’ve learned if you empty the cornbread upside down as soon as you take it out of the oven that it helps. That works for regular cornbread but I’m going to try it when I make this Mexican version. Have a good weekend!
