MO'S SOURDOUGH RECIPE
Mo's Sourdough Starter 零浪費天然酵母: • 毛姐天然酵母 Mo's Sourdough ...
步驟1 ~ 餵食酸麵種
● 用 1:1:1 比例餵食酸麵種
● 來自自製天然酵母的”Mother” 酸麵種40克,黑麥粉20克+高筋麵包粉20克,水40克
● 攪均,蓋上一塊粗棉布,然後等它發漲至兩倍(約4-5小時)
步驟2~ 酸種包正式製作過程
第一天
食材 :
1. 水 350ml
2. 酸麵種 100克
3. 高筋麵包粉 350g
4. Einkorn麵粉 100g
5. Spelt麵粉 50克
6. 鹽10g
(**可以用全麥麵粉代替Einkorn麵粉和Spelt麵粉)
方法 :
● 混合水和酸麵種
● 加入所有麵粉和鹽
● 充分混合所有成分
● 蓋着靜置 1小時
● 開始”伸展並折疊”麵團,共3次,每次相隔30分鐘
● 將麵團塑型並放入籃子
● 用保鮮膜或浴帽蓋住它,移去冰箱中放置過夜(8-12小時)
第二天
● 將帶蓋的鑄鐵鍋放入烤箱
● 預熱烤箱1小時, 260°C
● 將麵團從冰箱中移出
● 放在牛油紙上
● 刀片在麵團上𠝹一刀
● 取出預熱的鑄鐵鍋,將麵團和牛油紙一併放入鑄鐵鍋中
● 蓋好後放回烤箱
● 在260°C下烘焗20分鐘
● 打開蓋子,在220°C烘焗20分鐘
● 將焗好的麵團移到架子上,靜置15-30分鐘,然後再切開。
Step 1 ~ Prepare the levain
● 1:1:1 (40g of starter from the Mother, Rye Flour 20g + Bread Flour 20g, Water 40g)
● Mix well, cover it with a piece of cheesecloth and rubber band, wait until it rises to double (about 4-5 hours)
Step 2 ~ Making of the Sourdough
DAY 1
Ingredients :
1. Water 350ml
2. Levain 100g
3. Bread Flour 350g
4. Einkorn Flour 100g
5. Spelt Flour 50g
6. Salt 10g
(**Can replace Einkorn Flour & Spelt Flour with WholeWheat Flour)
Method :
● Mix water and levain
● Add in all the flour and salt
● Mix all the ingredients well
● Leave it covered for 1 hour
● 3 sets of “Stretch and fold” the dough and wait 30 mins between sets.
● Shape the dough and put it into the basket
● Cover it with cling film or shower cap and let it rest in the fridge overnight (8-12 hours)
DAY 2
● Place the covered iron cast pan into the oven
● Preheat the oven to 260°C for 1 hour before baking
● Move the dough from the fridge
● Place it on a parchment paper
● Score the dough
● Take the preheated iron cast out and place the dough with the parchment paper into the iron cast pan
● cover and bring it back to the oven
● bake it at 260°C for 20mins
● Open the lid and bake at 220°C for another 20mins
● Move the baked sourdough to a rack and let it cool down for 15-30 mins before cutting.

內容好好睇,成個流程好有資訊性,毛姐嘅手勢更加係冇得彈😂 但係個鏡頭發到有啲頭暈。 可能因為影片長度啦,完全唔覺得悶,但係見到嗰啲fast forward好似有少少突兀(個人其實幾鍾意睇搓麵團🤣), 後半段條聲唔知點解細聲咗,係好多時候香港KZbin好難睇到嘅好內容,希望可以快啲出下一條片啦🤣🤣🤣

Hello, I’m from New York. Love your sourdough tutorials. 講解清楚👍🏻 新手立刻跟著做,營幕及文字的焗烤時間有點差異,是否一樣條條大路通sourdough 😂 營幕:260C 30 mins with lid 215C 10 mins without lid 文字: 260C 20 mins with lid 230C. 20 mins without lid

Thanks for the tip. Good to know I can replace Einkorn Flour & Spelt Flour with Whole Wheat flour because I don't want to keep so many different flour at home. I like all your fancy cook wares but I guess it is quite expensive. Do I really need to use the iron cast pan? Can I just put it in a baking pan? I like bread very much. After watching your clip, I will change to make my other bread to this; to eat healthier and wiser. Will let you know if I am successful. Too bad I am in Canada, could not receive your starter if I fail. Anyhow, thank you very much for sharing. Cheers.

Iron cast pan definitely makes a better oven spring for the dough. Looking forward to your sharing of your sourdough

@@teresamo1658 Thank you for you prompt reply. I only use the convection oven to bake therefore it may not be big enough to put the iron cast pan in. I may use your method to make the sour dough bread or sandwich instead. Will let you know the result. Thank you again.

Hi Ms Mo, I followed every step and the ingredients as in your recipe and video. The bread after baking didn't look as handsome as yours but Can you please advise why my bread is still wet inside.. so sad! Tq

Love your video ! I have also started my Sourdough Journey. A WARNING - Once you have started, you will never turn back to store bought commercial yeast bread 😅. Will be trying your recipe with spelt and enikorn flour but can you share a recipe for a smaller loaf ? 🙏

謝謝毛姐分享! 可惜酸種包在香港並不普遍,10年前我在香港一間叫Levain?店買酸種包60多元至80元1個,拖着女兒走了好多山路才找到在中環那邊,就是為了買到健康的面包。终於我自己可以做sourdough bread ,做了好幾年了。

Hello Mo Jie, I just noticed that your it look like your oven fans is on when you bake the bread. Did you use the bake function or conv. Bake? Any different when we making French bread? Thanks

Be careful: when the starter became dark in the first part can be mold. If it’s mold you should through everything out and build again another starter!!!

毛姐,妳好!很開心及驚喜見到妳出生活飲食頻道,我已經第一時間訂閱了。 我很喜歡做sourdough bread,但做了很多次仍未能掌握竅門,做不出漂亮的耳朵。我試了很多用Dutch oven及自製蒸氣,雖然麵包會裂開,但總是開不出耳朵。是不是我做scoring做得不好,還是有其他問題?希望妳能給我一些意見。謝謝!

Hi Lender, 太多因素會影響scoring, 如所用的麵粉筋性強弱、水份的多少、shaping前麵團的發酵程度足夠否、shaping做得適當否、spring oven等等...都可以影響到耳朵的樣子。

Love your KZbin videos! Thank you so much for sharing your professional chef expertise. I followed your sourdough bread video receipt it turned out close to yours! Please correct your written recipe below the video, there are mistakes in temperature and baking time. It should be read as your video indicated for the first time temperature is 260C for 30 minutes and then the open lid turns down the temperature to 215C bake for another 10 minutes. Thanks again for sharing your recipe and guidance.

Hi MO, I tried your method of making a starter. The starter died after 4 days. I tried again and it works the second time. Very pleased with the outcome of making my 1st ever sourdough bread with the starter . Thank you for making this video. Cheers and love from Malaysia.

你好Mo 姐,多謝分享。請問你最終只用100克酸面種,但做出來的酸種共有120克 (40克mother+40克面粉+40克水), 剩下的20克酸種係丟掉,定係混合返原來的mother 酸面種?我只想知怎樣maintain 啲starter. 不知可否混合不同的酸種。謝謝!

Add oil ⛽️ Einkorn Flour is hard (sold out) to find in Hong Kong now 😢. For a temp solution, what is an ideal ratio of other types flour to replace Einkorn Flour that will not affect the sourdough quality?

😍😍👍🏻好多KOL教煮嘢食,但廣東話教sourdough 就好少. 見到Mo姐即刻入嚟睇, 發現除咗教你做法仲有好多其他知識, (同埋笑料😄, 討厭果啲考試冇溫書但💯). 我以前試過整天然酵母同sourdough 都失敗就冇心機再試, 睇見Mo姐個包整得超級靚🤗一定會跟著呢條片再試. (未必個個有咁大個焗爐, 請問有冇其他天然酵母麵包使用細啲嘅焗爐都可以?)

多謝支持同喜歡我們的笑料😊 其實只要焗爐裝得下鑄鐵鍋就得,如果不用鍋都整到,不過麵包外觀可能沒有那麼理想。 天然酵母是可以用來焗好多種麵包的。 焗好麵包可以出IG post tag@moje115,有可能會得到100份之中的一個媽媽 (Mo's 天然酵母)!❤️
