Made it a few days ago. Totally loved it. I do have a few questions. - I just wonder why the skin around the closed cavity exploded. - How much water did you use to cook the duck skin? It kept cooling down as I poured it on the skin so I reheated the mixture a couple times. - Would you suggest putting the duck in boiled water like the way you made Hainanese chicken, but for much shorter time? I use two liters of hot water to rinse the duck skin,when the water is boiling,Turn off the fire and rinse the duck skin,No need to cook duck skin,then boiling 2 bowls white vinegar and 2 tbsp red vinegar,Add 2 tbsp of maltose syrup,after boiling let’s cooling,then rinse the duck skin 3 times,during 45 minutes,and then wait for duck skin dry,that way also can make the duck skin nicely!
