In your mother's defense, classic mint jelly does NOT look florescent green like that. Guaranteed those are artificial colours and flavours. The natural jelly is honey brown and the hint of green comes from real mint leaves suspended in the preserve. It's especially delicious with lamb because the sweet tanginess of the jelly tones down the gaminess of the meat. Your mother is totally right!
