Hello Tina, I like to use the very soft white yam, I know it is not always easy to find, but for me that gives the best results; do you remember the yam flakes they had in a box in Barbados, way back in the day, do you know if they still have it; I have been asking my cousin but she don't seem to think so. Ohhh that was just the best in my opinion, I mean nothing is better than fresh but that was a good quick fix, and love it with steam flying fish, yummy!! One day I will make my version of yam pie; have you ever tried dasheen, so delicious!! It looks good Tina and I know it is delicious, enjoy and tfs. Xo
