Ingredients:
#Peanuts - 2 tbspns
#Coriander seeds -1 tbspn
#Chana dal-1 tbspn
Dry red #chillies - 4
#Sesame seeds -1 tbspn
Shredded #coconut -1 tbspn
#Cinnamon stick-1/2 inch
#cloves - 4
#cardamom - 1
#Tamarind - goose berry size
#Salt - 2 spns
#Water - half cup
#Tindora / #dondakaya - 1/2 kg
#Oil - 3 tbspns
#Turmeric powder - 1/4th spn
#Mustard seeds - 1 spn
#Cumin - 1 spn
#Fenugreek seeds - 1/4th spn
#Bay leafs - 2(small)
Chopped #onions - 2(small)
Slit green #chillies - 2
#Curry leaves - 1 sprig
Chopped #coriander - half cup
#Ginger and #garlic paste - 1/2 spn
Chopped #tomatoes - 2
#Chilli powder - 1 tbspn
Procedure:
1) Into a medium hot pan add Peanuts-2 tbspns, Coriander seeds-1 tbspn, Chana dal-1 tbspn, dry red chillies-4, Sesame seeds-1 tbspn, shredded coconut-1 tbspn, Cinnamon stick-1/2 inch,cloves-4,cardamom-1, Tamarind-goose berry size. Fry for 3 mins on low flame and transfer to a mixi jar. Add Salt-1 spn and Water - half cup and grind it to smooth paste by adding water.
2) Take Tindora/dondakaya-1/2 kg and remove top part and cut into x mark as shown in the video. Into a medium hot kadai take Oil-3 tbspns and add chopped tindora, add turmeric powder-1/4th spn, Salt-1/2 spn. Fry for 1 min and cover and cook for 3 mins and keep aside.
3) Into a medium hot kadai add Mustard seeds- 1 spn, Cumin-1 spn, Fenugreek seeds-1/4th spn, Bay leafs-2(small), chopped onions-2(small), slit green chillies-2, Curry leaves-1 sprig. Fry for 1 min on medium flame and then add chopped coriander-half cup and fry well. Add ginger and garlic paste-1/2 spn and fry till raw smell goes off. Add chopped tomatoes-2 and fry well. Add chilli powder-1 tbspn, salt-1/2 tbspn and mix well. Now cover and cook for 2 mins or till tomatoes are soft.
4) Add grinded masala paste and add some water to the jar so that you get the remaining masala paste and pour into the kadai and mix well. Adjust the consistency by adding water and give a mix. Add fried tindora and mix well. Cover and cook for 5 mins on medium flame. When oil separates add coriander leaves and serve in a bowl.
Tips:
- You can add cashew nuts while grinding the spices.
- Use green tindora and do not use which became red inside.
- When oil separates from the pan, turn off the stove immediately.
- While frying spices please use low flame to avoid burning spices.
