I witness many cases as myself got into this hot soup as the water spinach is very " rubbery " if we didn't bite them to break off, half will go into our throat, and half in our mouth ! My nephew was in this stage and he was 5 years old. At once I noticed something was wrong with him while eating. At once I asked him to open his mouth, I pulled the cooked Water Spianch out ! Since then I cut them to 2 inches across the whole plant or use my fingers to pinch the leave, the stem all in 1 go, 2 inches long, so no branches and leave and ended up 10 inches long.

4:25 Garlic 4:35 Water spinach 4:39 Ice water to stop the spinach being overcooked and keep it crunchy 4:44 Mung bean sprout 5:00 Looks like sesame seeds, sugar, oyster sause, soy sauce, etc. for seasonings 5:11 Tofu 5:43 I guess any kind of mushrooms will do if you don't have this 6:44 Red shallots 6:46 Straw mushrooms 6:50 Lotus seeds, then mushrooms, then seems to be tofu but finally another big lot of tofu went in so unsure if the previous lot was tofu or not...maybe stems of mushrooms... Finally seasonings, spring onions, coriander...
