I used to do this in my tiny Baltimore studio only because the kitchen was literally in a standard size contractor's closet (folding doors and all). There was only one small shelf above the stove/fridge and a whole INCH of counterspace. It got SUPER annoying, though, since I liked to bake. A lot.

This is very helpful. It mirrors a lot of the habits I had as a barista. Why doesn't anyone else talk about practical things like this? Someone needs to give you a show man. And as always, I love that your videos aren't commercials in disguise.

Thank you. I feel so affirmed 😀 I learned second hand and often doubt skills. Got everything except oil bottle in a ramekin to catch the inevitable drip coating (been using a paper towel square). Aleppo pepper! That was my 2019 discovery. So good! What’s been your “I did not know that. I’m gonna start doing that” for 2020? And your top ingredient or product discovery this year, pls? I feel like at this point I have a pretty good handle on keeping my mis en place/workspace clean as I go, but one of the things that still gets away from me (and most videos never talk about), is staying clean during the execution phase. Like, when I have 3 large pots and large tools like chinois or giant bowls/strainers, and you don't have time to clean them in the moment, where do you pile them up to keep your kitchen organized? Can't really use the sink because I'll often still need it, and some things are too big for the dishwasher. I realize that this is why restaurant kitchens can have a section to stack dirty dishes, and they'll often employ dishwashers during service, but how do you translate this to your own home kitchen?

This was so interesting, thank you ! May I just ask how you keep your oil squeeze bottle so pristine ? My ends up super oily, greasy, and most annoyingly, sticky, and I can’t get the sticky texture off no matter how much I scrub it when it needs a refill ! Thanks in advance

What restaurants did you work at/chefs did you learn under? I worked in Vegas for a few years as BOH and I’m familiar with all your techniques and I’m curious where you worked!

My beginnings were fast casual restaurants then I worked at Redbird for Neal Fraser and during my time there we had a large event space so I got to work with numerous chefs (Ferguson Henderson, Nancy silverton, Dominique crenn) and before that I worked under a super group of chefs at a place called superba (Lincoln Carson, Jason travi) I spent some time at providence which is a two Michelin star in Los Angeles owned by Michael cimmarusti , and most recently I worked at auburn for chef Eric Bost who worked in France for guy savoy, Alain duccasse and many other Michelin pedigree chefs. So I’m very lucky to have learned under so many amazing chefs
