LOVE this. I lamented while in Venice that I had a very lazy tiramisu at a business dinner... half frozen, tourist attraction place. Then... then I noticed near my hotel where the locals were going in and out. That "hole in the wall" place, where most would just walk past. I had their most amazing dessert and took pictures all night of historic doors and doorknobs and windows instead of going to my biz meeting... I went to bed hungry that first night but learned how to follow those who KNEW where the best food was.

For people worried about the raw eggs, here's a version of how I used to make them: Divide the sugar and boil half of it with a little water (the rest goes for the yolks), after this start beating the egg whites; once bubbly dip a fork in the honey-like mix and blow between the gaps if actual bubbles come out the fork add the syrup little by little non-stop to the egg whites while mixing them, the heat of the honey kills the bacteria and just keep mixing until it's room temperature again. This is an italian meringue or it is as far as I know (I believed Marinara was italian before this channel) so I don't know anymore. For the yolks you can put them with the sugar on a bowl on boiling water and mix until the sugar dissolves and it becomes thick just be careful not to cook the yolk. Once you've done this just mix them 'till fluffy like the video and proceed with the rest of the recipe.

Heh, I thought shaving little chips of dark chocolate in the middle was my own invention :) I really love doing that; I find it works super well to balance the flavors, and it provides just a little bit of texture that's really welcome as tiramisù can easily be mush on mush on mush (especially if you soak the savoiardi a bit too much). I absolutely adore a good tiramisù, the combination of espresso, mascarpone and marsala is just to die for

Nice!. I pretty much make the same recipe. It was past to me by an Italian friend of my mother. I'm not italian, just so you know :( The only difference is that I make zabaglione with the eggs and then after it has cooled, I mix as usual the marscarpone. I make sure its as fluffy as it can get before mixing with marscarpone. I don't use the whites, so I leave them on the side to make Meringue or something else. Not too fond of eating raw eggs. After all is done, in the fridge over night to stiffen up. Have you ever tried making tiramisu with zabaglione?. I've made both types and I so much prefer it when its made with zabaglione. The taste is a big difference. Oh, and I use a bit of zambuca and/or contreau in the coffee.
