Ohhhh you know we love our Hatch Green Chiles in New Mexico and... Tis The Season, Hatch Green Chile Season! Red, Green or Christmas! Stuffed green chile poppers are amazing! If you have some fresh green chiles, make poppers! For roasting, I prefer roasting my green chiles on a propane grill so that they don't get beat up in those roasters. Not all do that, but the inexperienced roasters can really mess up your chiles. Plus roasting them yourself allows you to control the char! And when it's time to remove the skin, it slides right off! Tis The Season, Hatch Green Chile Season! Red, Green or Christmas! If you are not sure if you want red or green, get Christmas! It's the best of both worlds!

Kevin , yes , Hatch Green chilis are arguably one of the best peppers on the planet. I enjoyed your video immensely! Remembering back to the days when I lived in Colorado watching these New Mexico peppers being freshly roasted, oh the smell. They did this on Federal Avenue. When I moved to Virginia in 1978 I was never imagining that I could get my hands on these infamous peppers. But I was wrong, Wegmans, a local grocery store actually fire roasted. These chilis straight out of New Mexico at their stores. I have bought many bottles from Amazon, and their good, but not like the real deal. Thanks for this great recipe for a guy that actually knows the real deal. So versatile, nothing like cooking up a batch of green chili with pork utilizing Hatch Green chilis. This is an amazing concoction that I love to this day. Please stay connected. My friend

You are absolutely correct, Glen! I'm sure my neighbors were enjoying the smell 😀 I posted a short video with a Hatch Green Chile finder as they shipped nationwide this year. I suppose it listed your area if your local store had them. I hope you were able to get some! I like roasting them myself so they don't get all beat up in those roasters. Some operators just don't have the experience, and over roast them. I hope you have an awesome day, brother!✌️👍
