Turn griddle on first. Pre-heat on 300 F low so that griddle does not bend.Make eggs and bacon and get comfortable with settings. Make hotdogs or hamburgers first. Dry Chicken salted on the sides, baste in BBQ sauce later. Any marinade creates a cleaning issue. Sauce cools down the heat. TIPS and TRICKS. RIGHT SIDE is hotter ? KNOW your ZONES before you cook for company.

My number one reason for beginners is get a back grease trap griddle, you won't have to go Through That kind of a mess in front of you. There's no mess. And those other tips he gave you were spot on😊

This is how all cuts burn with different seasonings. You had the griddle on too high from the start. Its cooking 101. not just griddle cooking. It definitely taught me how hot these get. You are 100% right about never turning the heat up all the way. Thanks! I learned a lot

I have one of those internal thermometers. I just cooked 5 chicken breasts and 4 of them were over 160 degrees, but the fifth one was only 120 degrees. I definitely agree that it’s important to check all pieces!

Literally, you're the only reason behind me buying my first flat-top griddle next week. I used to be focused only on pallets and kettles smokers when it comes to preparing food, not anymore because of the brilliant work you keep doing in this channel. Appreciate every info, and keep it up dude!

45 years ago the place I worked the cook would, between doing burgers and bacon would pour a little bit of seltzer water or club soda on the grill to clean it between cooking and then also at the end of the night, that is what she used to clean off the crud and then in the morning before she would start cooking she always sprinkled the grill down with salt lightly!! She had the most beautiful griddle!! 👍🏼😂😁

I have watched many of your videos now and as a result, pulled the trigger on a Blackstone. I fought this as my last miracle device was an expensive Traeger which has been disappointing at best. Moving on, after trying Freddy's Steakburgers and finding the best burger I ever tasted, but living very rural, 4 hours away with poor restaurants, I purchased the Blackstone in town from Costco for $369. My first use was breakfast with mixed results, poor on hash browns, but excellent for scrambled eggs/bacon. As you say in many videos, it helped me learn the zones on my griddle which is helpful to move food across the griddle accordingly. And just like normal cooking, it is about trying different things until you nail it. In that regard I have found this griddle to be of great potential and excited. This was emphasized when my very first attempt at Smashburgers was shockingly successful, with my wife stating it was the best homemade burger she has ever eaten, and I will say the best I have had outside of Freddy's. Still excellent and far surpassed any burger I have done in 30 years on the grill, stove or Traeger. In short, it just justified the purchase of this Blackstone. Your videos helped immensely in timing of what to cook first, but also every aspect of cooking the smashburger itself. I bought a stainless 6" round burger press vs. the rectangular one you use and it is heavy and allows great control. My wife was talking to me when I was cooking the very 1st smashburger, and I thought I overcooked it after I turned it. But your instruction in using the spatula angled to cut it off is a game changer allowing great control, even at different sides is what allows success and once I turned it, I realized it was probably Ok, so I kept it for myself and it was perfect. The aspect I love about these smashburgers is the crispy edges, but also having this texture across the surface. My wife was surprised at the full taste, and I gave her your explanation of now with having 2 patties you have double the surface area for this Maillard reaction and juices. I still think I can improve as I like the edges a little crispier, and I think I did over pack the meatball slightly, but was shocked that my first smashburger was an incredible success. Now maybe I can do 2 burgers at once, but not worried since these are so quick and I pop it over to warm while other burgers cook. I also struggled with griddle size given price and that my kids are 17 & 19 and with sports/school, mostly just my wife and I for dinner now. I found I could get a Blackstone 22" griddle with mandated steel cover for $350 on Amazon, but found a 36" at Costco. I thought the 36" was exceedingly large/overkill which is why I also considered the 22". Even with a couple uses under the belt I believe the smaller griddle would have been a mistake, even cooking for 2. Per your point on getting to know your zones, I found that 4 zones and a 36" griddle allows excellent control. I have found that after preheating all zones on low, then turning off the 1st zone on the left allows me to use it as a warming zone, with the middle 2 zones for high heat cooking, and the last zone used for lower heat cooking like sauteing vegetables, or slower meats like bacon. The temps of my Costco griddle vary so I can use front/right side while these 3 zones are on low, even manipulate the middle 2 zones as meat cools the griddle. It works perfectly, where I can imagine having less zones, especially 2 on the 22" model far more difficult, where you are now dealing with the different items you are cooking either have to be removed and cold, or left on to overcook. So, I will say the 36" with 4 zones allows much more control and a better result without frustration of cooling, burning, but also crowding the griddle. You can cook multiple items at the same time, often without cross contaminating if that is an issue. In the end I am happy I purchased the 36" model, and excited this will be another win/heavily used product like my Paragon Theater Pop 6 popcorn maker that is irreplaceable. Anyway, thank you for all your tips, I did subscribe which I never do...

Sugar starts to burn around 300-325 degrees. I used to do a ton of cooking on smokers doing BBQ. I have wanted a flat top griddle for a while. Instead of building my own I bought a pit boss 2 burner after catching it on sale. I don’t do the big cooks anymore so I’m going to use the griddle for breakfast mainly. Mostly for the family. Anyone familiar with cooking in cast iron shouldn’t have a problem with seasoning a flat top. Love your videos and Thank You for your service!

when I clean and reseason my griddle I use tongs with the paper towel I use, it keeps my hands away from any splatter and or excess heat from my griddle. It can be a little tricky to get use to but in the end I find it worth it, keeps my digits safe :)

My brother just bought me a griddle. Im just this year at, 52, perfecting my steak grilling, ribrub and smoking, and general charcoal cooking practices with different meats and veggies. I’ve only used my griddle twice. A whole lot more work to clean up than my Weber gas grill with a cast iron grate which I have well seasoned. I’m reluctant to dirty up the griddle now when I love cooking on my grill. Thanks for the videos. Hopefully you will show something that inspires me to try again. 👍

I bought my blackstone flat grill at a garage sale for a steal of a deal. I mainly use it at our deer camp to make breakfast especially for the kids. I’m still learning the grill and watching your videos daily. It’s so much fun. I’m addicted to this thing lol. The hunting season is over unfortunately so it’s back home for me to practice all summer. I purchased a digital thermometer yesterday. Here in south Louisiana we look for every excuse to cook, like Mardi Gras in 2 weeks. Keep up the great videos man, I truly enjoy them.

Thanks for the tips. I just bought a griddle but I bought, the steelmade indoor version for over my gas stove. I know that isn't as high speed as the stuff a lot of you are using, but I've been going through a lot of your videos for tips and plus recipe ideas. You've given me a ton of ideas right off rip, so thank you for the that. I figure an indoor version vs an outdoor version will have some variation, but I think a lot of what you are showing us applies to some degree or other, so again thank you for that!

What you're calling carnalized sugar (proteins and sugars), is called "fond", created by the maillard reaction, and is where a lot of the flavor comes from. especially for souses. This is what your picking up when deglazing a pan. If you don't use it, you can remove it easily by adding water to the cooking surface - comes right up.

Thanks so much for posting this video. I learned a TON! My gas grill is on it's last legs and I have a dedicated smoker. So I'm really considering buying a griddle to replace my gas grill. I know there are things to consider but based on what we like to grill I think a griddle would be perfect and then some. But I wanted to see what I might be getting into first and this video is perfect. Thanks again!

@@TheFlatTopKing It's a smaller 23" I use when just doing something for me and the bride. As you can see from the knobs it's got three burners, 8500btu each. As I mentioned to Amy it's no longer available on Amazon, but I also gave her a second response that had an Amazon link and some specs.

I didnt know Pit Boss made porcelain tops...If you are asking about the Ceramic tops from the Ultimate Model we have tons of videos...maintenance, tips, and how mine messed up...But if its not a ceramic model...I just didnt know that...

anytime I cook chicken and add seasoning, I always add poultry seasoning. It makes any chicken taste great. It will not overpower the other seasonings you use but it is the best accent. Remember, cooking is all about seasoning. Give it a try. Chef Jerry

I am glad o found this video I have a Blackstone griddle and used it for the first time. It was easy to clean up I made Chicken quesadillas and the chicken started sticking so we had to add a little oil cleanup was good I want to try some steaks but I'm kind of scared to. I might try bacon and eggs. Thanks for the tip heating a l griddle on low will definitely do that

The stuff you're scraping away is called "fond", it's where a lot of the flavor is. That's why chefs deglaze the pan they're browning meat in with wine or chicken broth or even water, any cold liquid, which will break the fond off the cooking surface. This is the base for many sauces, also.

worth mentioning, NEVER try to remove the patina, I have a bueaclaire camp griddle system and on a group camp trip I cooked for 30 people well into late evening so left it outside at night knowing no harm would come to it even if we had rain, got up the next morning to find a male guest had used a rotary wire brush on his cordless drill to clean it, it was stripped to original steel, took me 6 months to rebuild the patina, I didn't have the heart to admit the damage he did as his intentions were to help. I learnt a lesson look after your kit yourself and never allow someone else to season or clean unless supervised by you.

Researching flat tops I have never used one or seen one used. I love your videos! So helpful! Giving me confidence to give this a try. I had a bad experience with a gas grill. Grill and propane tank caught fire scared me to death thank goodness I had a fire extinguisher and have never used a gas grill again. But I really want a flat top so guess I will give it another try. Thank you it is 2022 do you still do videos?

As a teen I worked as a short order cook, we had flat tops grills, the way I was trained to clean at the end of the night was to use vinegar to the grill, while the grill was still hot, warning the fumes of the vinegar hurts the nose, breathe thru your mouth - scrape off the gunk, then pour water on the grill, then use comet or ajax with a square stone, and clean the grill top with this stone, sorry I do not know the name of this stone, we just called it *(the stone)* then wash with mild soap and water, the paper towel dry the top, then bring the grill to a low heat, pour oil on a paper towel and rub the grill with this oiled towel.. *DONE* it looked brand new every time. Oh this grill is perfect for making submarines BTW At home with no grill making subs with a large cast iron frying pan so messy and tricky, wish I had a grill like this at the time....

Anthony I would think you are 100 percent correct...the thing I would say is these that are for residential are made of rolled steel that mimics cast iron perfectly. I would think what your used to is stainless steel which is what we used in the Navy and thats really close to how we do it as well. With cast iron they need to remain seasoned and by doing that method strips the seasoning and would completely ruin these types immediately... You are correct again on the subs idea....I have one video called italian sandwich on the griddle and used your method...look it and let me know what you think...

When you preheat your griddle on low, do you use all four burners, or do you only use 1 or 2? I've had two tops warp on me with the very first use, I only used low heat and my outdoor temps were around 70 degrees. Camp Chef customer support for anyone who might want to know, is amazing. Huge selling point.

Lets break down this in sections. 1, I have mentioned several times that 2 of the biggest factors for purchasing a camp chef was customer service reviews. Thats huge to me. 2. I have struggled with these questions since day one and kinda have flipped flopped as well. As of right now I always pre heat on low. I very rarely turn a burner off. In previous videos when I first started I would do it a lot more. After joining several fg groups it seems like it happens quite a bit with warping so I have been carful. 4. My suggestion is pre heat all on low to around 300 then if need be you can turn one off, I have also found that cleaning as you go can help back the temp off as well then thats another way to control temp.
