I saw a post somewhere (I think Reddit) which explained Mooncat's controls as "cat accessible", IE whole paw on each side of the controller, and for some reason that's what made it click for me.

It's a really great idea, but you can actually get used to it fairly quickly, just think of it as a 2 button game. Playing the game is good, but watching NL play it is much better, because he's pretty bad at it.
